Rubio's Mexican Restaurant inside Amerige Heights Town Center has so much potential! They always serve delicious fish tacos and shrimp burritos that never disappoint. However, I think there are ways to improve the dining experience at Rubio's, which could attract more customers and make it even better. Food is good and made fresh, so it can be a bit slow to come out. The salsa bar has a good variety of flavors and spiciness. They serve beer. But the bathroom at this location was very gross when I was there in December of 2023.

I ordered a California bowl with shrimp. I received 5 shrimp. My rice was over cooked and the bean portion was little to none. It was basically mush rice 5 shrimp smothered In chipotle sauce. The guys working were friendly and nice the food not so great. Would not come back to this Rubio. Wish I saw reviews before I ate here.
