This restaurant blew my expectations out of the water! My bf has known the owner through covid and thank god he could make it through with Cluck Kitchen and the Cut. It’s very obvious the owner and chefs have a PALETTE. I got the pork belly burger and my god. The havarti and the sweetness of the bacon jam are choices the opposite of arbitrary. Was visiting from out of town and always on the prowl for great burgers during my travels. There are some truly great burger joints in So Cal and The Cut is right up there with the best of them. I always start with the basic burger, and this one did not disappoint. Cooked perfectly to medium rare and seasoned well with a burger to bun ratio that was spot on. I did not get a chance for a photo since I was a bit hungry and had visitors. I had the Swiss and mushrooms burger. It's was amazing. My partners ordered the blu cheese burger, Cubano, chicken salad, and they all were i.pressed with the food quality and taste. I will get a picture for sure next time.
