We go here probably 3-4 times a year. We always get exceptional service and wonderful food. Carlos and all the staff are warm and welcoming and attentive. Do not listen to the one star reviews. People will complain about everything and anything. This place is the best!

Best fine dining in town. Serious menu, excellent wine list, truly good food, and serious prices to go with it. Highly recommend the French take on the Pervuian classic, Lomo Saltado. Best creme brulee I've had in the U.S.

Celebrated my one year anniversary here with my husband and we loved it! Carlos greeted us at the front door by name and this was our first time ever being here. Even with other parties in the room it felt like we received a private dining experience. Carlos made great menu recommendations and the food was fantastic! I had the steak filet mignon and my husband had the lamb chops everything was cooked to perfection! We absolutely enjoyed our dining experience here and will recommend everyone visit Carlos.

Took my fiance here for our engagement dinner and absolutely loved it! We ordered the fried oysters and Carlos’ special lobster bisque. Then for dinner we ordered the filet mignon and filet a la oscar which was incredible. The flavors were amazing and at points all we could say was it was melting in our mouths.Throughout the whole dining experience, Carlos was very attentive, respectful, and professional. Additionally, he is a joy to talk to about the food and his experience. Highly recommend if you want a more intimate formal dining experience.

Absolutely the best dining experience my husband Justin and I have had since long before Covid. It was an impromptu stop for dinner while we were down in the Springs. From the moment we walked in the door there was amazing service. The entire dining experience was incredible. We can't say enough about the quality of food. We cannot wait to return. We had a great time for a birthday event.We had the crab cakes and fried oysters as an appetizer. They both were amazing and delicious!For the main course we had the filet mignon steak, the pork chop, and the jumbo seared scallops.We do it family style and everyone shared a small portion of their dishes.All of the dishes were amazing!For drinks we had sidecars and pisco sours. Smoothest sidecars I’ve ever had. My wife loved the pisco sours.For dessert she had the cigar. It’s a special kind of crepe and it was also spectacular!This restaurant was a great experience and we will definitely be coming back for any other special occasions we have!

Wonderful dining experience. Food is great, with a lot of variety for all palates. Wait staff is friendly and will know your name within minutes of sitting. Thank you Carlos for twenty years!

It's a decent restaurant. The owner/maitre'd is extremely nice. Knowledgeable. But the pricing of the restaurant is borderline ridiculous for a place like Colorado Springs. From the moment you sit down you're pelted with the lobster salad and bisque. The salad is $60. Seriously. On top of that, a table of six had a automatic gratuity of 30% added. Dinner for six averaged out to over $200 per person which is fine for a high end restaurant, but this is mid-tier.

Came here for my birthday! Carlos and Stephanie made the experience very memorable! The service was absolutely phenomenal! Would recommend! Food and drinks were fantastic, very well made. Not one bad thing to say.

The building is rundown, the menu ridiculously overpriced, and Carlos' enthusiasm cannot improve the food. Your dollar will go farther, the cuisine will be superior, at any number of restaurants in the Springs and Denver. Virtually any restaurant at the Brodmoor, the Pepper Tree, Four by Brother Luck, and so on.

Last night we had one of the BEST dining experiences ever! The minute we walked in it felt like we were welcomed into someone’s home. We were greeted by Carlos himself. It was not the kind of greeting you typically get at a restaurant…he introduced himself, shook our hands, asked us our first names, and from throughout the night he and his staff called us by our first names. I recall at one point Carlos was behind the bar making cocktails (which were amazing by the way) and he handed our drinks to our waiter and said, “these are for N… & S….”. It was like the song from the TV show Cheers, “where everybody knows your name”.The rest of the night went amazingly well. The food plate preparations of our entrees came out looking like pieces of art, and the flavors were amazing. I had the pasta and clams which was by far the best I ever had. What about the dessert, you ask? OMG! It was a cheesecake crepe doused in this amazing cream sauce with fresh berries. Having been to Italy, I can honestly say that the decor was beautiful and authentic. When we left, Carlos and our waiter (who was also amazing, by the way), acknowledged us as we left and thanked us for being their guests.Where I am going with all of this? This was not just about having a great meal and drinks. This was a unique dining experience that you otherwise would not get unless you were Italy ??.Most restaurants today are obvious about getting guests in and out as quickly as possible. Carlos’ Bistro is about making sure the guests not only enjoy its amazing cuisine, but having a memorable experience at the same time.We will be back!N & S
