We enjoyed eating at Potbelly in Illinois, so I was pleased to see one in Colorado. We were on our way to Ikea and decided to stop in for lunch. The interior looked familiar and relaxed, just like I remembered. I ordered the skinny roast beef sandwich with blue cheese and their vegetable soup.
