This is a special place that will now be my ramen shop. Tonight was my first experience at Miso but I know ramen. I got the Tonkotsu ramen which I have had at every ramen shop in the raleigh/cary area. It's my litmus test. If you can produce a good base Tonkotsu, then you have the right foundation and knowledge to make other foundations in my opinion.The noodles are perfect with bounce and chew. Food and service has been nothing but amazing!! I moved here from Hawaii and I'm used to traditional ramen and let me tell you, this ramen was spectacular! The broth was so flavorful, I got the spicy miso ramen with a level 2 spice but next time I will be going with the level 3. Such amazing environment and I will definitely be coming back here with a ramen craving!
