I love the food and business. The food is great and healthy. My spouse and I love the desserts. We are pretty active because of our careers so this business helps alleviate meal preparation during the weekends. The food options are diverse there are breakfast options. I love that Vibrant Meals is stocked at the downtown YMCA. When I leave my lunch at home or just need something quick before getting back to work, I usually grab a meal to go. They reheat easily and thoroughly. Today, I was bummed because my favorite, the Zesty Lemon Chicken, was already sold out. So, I decided to try something new- the Chicken Enchiladas. Oh man! I may just have a new favorite! Delicious! And thank you for not putting cooked/caramelized onions in this dish!
