We have been trying to get to Edinburg to try Wille B's for months and finally made it. We were not disappointed! We had the potato with brisket and it was delicious. What really impressed me was watching them check that they weren't putting any chunks of fat on top of the potato. The pit master (lovely woman) chopped the brisket and then pulled out any pieces she saw that were fat. It's a small thing, but I've never had a BBQ place take that step of care with their meats. We tried the half pound sandwich special with a side, Chef salad with meat on top, And a loaded baked potato… The only thing we wish is that we had a bigger stomach! Going to the valley and stopping by Willie B’s is a must! So tasty and the real smoke flavor goes a long way!
