Peter changs is the most authentic Chinese restaurant that I know of. a close second would be Full Kee on horsepin off of broad.
but P.Cheng's is a combo of traditional grandma like made hot pots with a twist of today to some beautifully created food art type appatisers. the scallion bubble packed is a delightfully fun munch.

We stopped in for a late dinner; no wait. The service is fast but wasn't open to any type of substitution of ingredients. The Lo Mein was expensive--a big portion (mostly noodles)--but very average for the price; have had much better.
