Proof, show me the proof that you deserve 5/5 Yelp stars? After tasting the canele, that was proof you deserve 5/5 Yelp stars, but you didn't stop there, you continued to wow with the chocolate croissant and regular . Our box was filled with goodies and we enjoyed 95% of the delectable treats. Our box was filled by a sweet lady but the coffee crew weren't friendly. Not sure if there's one line for baked goods and one line for coffee or if anyone can help-- confusing in a small setting. Anyways back to the reason we came back to Proof was the reason why we will return, caneles. Although an expensive treat, they are the best we've ever had. See you next time Proof.

In my opinion - one of the best iced vanilla lattes and chocolate chip cookies in la. Vanilla is made in house, isn't super sweet but has great flavor and was super pleasant. Alfred's etc are way too heavy on the vanilla syrup and they're way too sweet. This one was just right. Definitely in my top 2 vanilla lattes in LA right now. Chocolate chip cookie was 10/10. Definitely want to come back and try more things. Also the staff/owners were super pleasant. Overall a big fan.

This was at 8:30am and the guy cashier already looked bored. I ordered a pistachio croissant and because he wasn't paying attention, he gave me a regular croissant instead.

Best bakery I know of in LA. Consistently good quality pastries with top notch coffee to boot. There is a reason there is always a line here. Such a shame that they do not make a kouign Amman! They could also do with more seating.

I have been a long time resident of Atwater I been going to Proof here and there.It’s a bit pricey and now everything includes a tip ,Just for someone to hand you your stuff, lolTheir sandwiches, all their baked goods are well made though.However I’m writing the review today becauseI tried there guava and cream cheese pastryAnd I loved it, (Cuban here) I can honestly say I was impressed.Yum!It’s a hit, don’t stop making it!

A friend bought chocolate chip and chocolate crinkle cookies and they were amazing bakery style cookie perfection. The chocolate chip cookies were finished with a flaky sea salt that added that coveted salty sweet combo that everyone loves. Rather than individual chips these had huge chunks of chocolate creating these melty pools of chocolate that you encountered every bite! The crinkle cookie was also really good and texturally interesting with a deep chocolatey flavor! Would def swing by again if in the area and my sweet tooth is looking for some love

Came on a Saturday morning and was prepared to wait at least 20-30 minutes. I was pleasantly surprised that I only waited about 10! The line snaking outside makes sense when you realize just how tiny the place is. Service was friendly and efficient. I came in excited to try the almond and ham/Gruyère croissants and was disappointed to not see them in the case. I get it's a popular place, but I was there two hours after they opened, and knowing what their full selection is vs what was in the case, it's frustrating they were already out of so many things so early in the day. I ended up getting the pain au chocolat and the spinach roll. Total came to about $11.50, which is not cheap, but on par with other artisanal bakeries in LA. I was starving so I didn't take the time to warm them up when I got home. Despite this, they were both very good even when cold. They are on the smaller side, especially considering what you pay for them. I think this place is a liiiiiiitle overhyped (there are better and cheaper bakeries in town), but I would come back to try the two croissants I wanted to try. Guess I'll get there early or come on a weekday.

I've been a customer here for about 9 years and have always loved all their baked goods. However, I feel like the quality has gone down in the past year. Flavors/consistency are hit or miss as of recent and I'm so bummed about it. I purchased my all time favorite ham and cheese croissant and it didn't taste nearly as good as I remembered. Seems smaller, not as flaky, ham/cheese ratio was off and overall flavor wasn't there. For the prices they charge I expect top notch quality. I might need to find another spot for my baked good cravings.

Latte is fantastic and consistently so, their baked goods are also quite good. I took away a star because there is very little seating, but it's definitely worth a trip every once in a while even if the seating options are abysmal. There is usually a spot or two in the back parking lot though so that's a bonus.

I never cared for croissants until I tried Proof's bakery. The most flakiest and so delicious. The other pastries I've tried were all amazing!

I came here with a reocmmendsiron from my friend who told me the croissants here were out of this world amazing, so I strolled here with a friend on a Sunday and it was cuhrazyyyy. But, we made it in after insane parking and a super long line. It moves pretty quickly btw. I ordered the mushroom scone but was not a fan of the cumin punch that came with it. The cherry pistachio croissants were good. It was a lot and I couldn't taste much of the pistachio but there was a nice flaky crunch to it...the way croissants should taste (reminds me of tatte bakery in Boston, which I miss so much!!), a chocolate chip cookie that I could pass on next time and a pistachio cookie (kind of like a Mexican wedding cake) that didn't have much flavor. Overall, everything was okay, but I'll def be back for the croissants and hopefully they'll have caneles next time. Oooo!!!! And the sandwiches were bomb! They kept well even it was warm outside and in the car most of the day!

I walk here literally every weekend for a salami sandwich, like it seriously will be a factor against ever moving away. The famously long line isn't actually always there but we usually get there around 11. It's quite small inside so it's easy for the line to stretch out the door. Anyway, the salami sandwich: it's a cute sandwich you could picture Madeline eating for sure. The bread is fresh, crunchy, and lathered in tons of chive butter. The salami and manchego is nice & salty. I actually hate arugula but somehow this sandwich has me licking my lips as I eat it. When it's over, I get so sad that I have to wait another week. As far as anything else, everything is great and it really just comes down to personal preference. My other favorite is the canele--perfectly crispy outer crust with a subtle, sweet caramelized flavor + the inside is soft and custardy. They are known for their croissants. Not always my go-to but they are crisp, flaky, buttery, and the various flavors are all good; I'm usually most tempted when they have the toffee pecan. After getting used to these you definitely notice the downgrade in quality when you grab a croissant elsewhere.
