We have dined at Montesacro several times and love this restaurant. I am a big fan of amatriciana and I have been disappointed many times, but Montesacro does this pasta dish right. The guanciale is crispy and chewy all at the same time, and the sauce has a nice smokiness and a little kick to it. If this is your kind of thing, I highly recommend it! Atmosphere is nice. But please don’t make your guests wait 7 minutes in the entrance- only 2 tables were busy, just as a note. I guess it was too early and there was just 1 waiter.The service was good after, helpful employees.Pizza was fantastic, very flavorful and crispy.Pasta carbonara was fine.The cauliflower salad was very interesting, tasty.But- never serve 2nd mimosa which is twice smaller in size than what you served me before. A pizza is not just a pizza at this restaurant. It's very different and very good. They call it a pinsa... cloud like pizza. Their description is accurate.
