This is one of those reviews that can/should be skipped by ppl who are wondering about their OWN experience, how the cocktails are, etc. Rather, it is a "review" that is geared to reach the management of this place. If you're not management and still reading, maybe you'll in fact have a wonderful time and have great drinks . . .My little story: I went to The Devilbiss Room today (July 9, 2023) at around 8:30-8:45--first time in Winters--primarily because I wanted to check the town and wanted a decent cocktail and this place was open. When I walked in there were zero patrons and zero employees in sight. No bartender, not a soul in sight. Full disclosure is necessary here: "Nature" was seriously calling at this very moment, so my plan was to beeline to to bar, order a drink and excuse myself quickly to the restroom, do the duty, and come back and pay and relax and enjoy the cocktail. Since there was no one there to receive my excusing myself and I really had little time to wait for the bartender to appear, my plan changed emergency mode: go use the bathroom FIRST, and order a drink AFTER I was "relieved." I quickly found the "facilities" to the right of the bar, entered the loo, sat down, and soon heard a pounding on the locked door of the bathroom. I ignored it initially--these things happen of course--but soon again heard another knock and jerk at the locked door. I voiced to unknown person outside, with some aggravation: "I'm going to the bathroom!" I finished up quickly, washed my hands and emerged. Outside the door to my left was a lurking male employee (fairly large 20-30 year old dude, dark hair). I asked him what was going on. He told me that someone told him that a guy (insinuating me) was inside the bathroom for around an hour. I was taken aback, took a beat, thought for a second, and replied, "I think I was in there a total of 3-4 minutes" Which is of course the truth. (I'm not at all THAT typical guy who reads magazines and takes 20 minutes to take care of business). The employee looked at me rather incredulously, no reply, so I walked into the main room, looked at the bartender, who didn't say anything to the best of my recollection. Feeling accused and affronted, I said that while I intended to get a drink, no thanks at this point. I certainly wasn't up for the vibe of sitting there with these two people only, one or both who was patently a liar and at my own expense. I don't know or care if someone was lying to the other to cover their ass for not being behind the bar for a while, leaving the place completely vacant, if some homeless person likes to use this particular loo, or WHATEVER the backstory. I could. care. less. Diffusing the situation would have simply taken a "oh, I'm sorry dude, blah, blah, blah bs" retort from the dude-lurking-outside-the-bathroom-door. It is not my fault that literally no one was staffing the entire place when I came in to order a drink and I needed to use the facilities right then and there pronto. Employee's: Do not make customers nervous for and WHILE they are using the bathroom for god's sake! I'm 56 and out of an estimated 4,500 trips to public facilities, this is a first for me. To The D Room Owner/Management: You really need better help. You need people less prone to lie to customer's faces or at least possess the savvy to cover up their own bs when they screw up. I imagine good help could be hard to find in Winters but you never know . . .I'll end my diatribe with a speculation: I'm thinking the cocktails here are overrated at best.

Love having a lounge to come to in Winters just 2 doors down from the Buckhorn - have a nice cocktail or wine and some appetizers! They now have brunch on Sundays til 1PM and it's more of a light brunch vs. tons of egg options. The beef carpaccio and spinach and artichoke dip are great! Great historic ambience and a nice cool spot to visit and they let you come and go to listen to the downtown music if you want while holding your table - we had ordered a bottle of champagne, and they also have wonderful living room set ups for groups of say 8 with comfy sofa's and chairs and a cool bar seating for about 6 people while watching the bartender mix up their specialties.

This place has a great feel to it. Small space with comfy couches and chairs. Great decor and location. I really wanted to love it. I was disappointed in the food, small bites type menu, items sounded great but were not. For example the Chicken and waffles, cold toaster type waffle with a barely warm chicken nugget on top. They have a great drink menu, great Mimosa, but all expensive. For the prices they are charging i would expect the quality of the food and drinks to be much better. The service was good and people were friendly and maybe I'll give it another try.

New brunch is amazing! Croissant takes awhile but is worth the wait. Lovely Bloody Mary's and chicken and waffles. We definitely would visit again!

This is my new favorite place anywhere near and around Vacaville. The cocktails are perfectly made and taste good too!! we had scallops on the half shell that were absolutely delicious and we had beef tartare which was incredibly tasty and we added artichoke dip with toasted French bread. It was more than we can eat but we love the atmosphere and the service was fantastic so this is my new favorite place! We also had a couple nice McAllen 12s. You should definitely give it a try!

My husband and I loved The DeVilbiss Room! The place is swanky, we loved the decor. But the drinks were the best part! I had THE best Manhattan ever. Highly recommend this place for a drink and light bites to eat!
