The ambiance is beautiful, service was attentive. The various course were very good. The only 2 item that fell short was the rib eye special...it was fatty and not flavorful and the trout....it was dry and wasn't presented as nicely as the other dishes. At this price point everything should be 100% on the mark.I look forward to returning in the future.

Our server was great but she had too many tables to be very attentive. Food took a really long time and then two dishes were cold (and had clearly been sitting under the heat lamp for ages). Peruvian Lomo Saltado had too much soy sauce and was crazy salty and meat was overcooked. They took money off the bill without us asking, which was nice but I was underwhelmed. I’ve eaten there several times in the past and it was better.

Step into Betula and you'll instantly recognize it as more than just a restaurant—it's an experience in fine dining. The ambiance is a blend of sophistication and charm, with different zones to cater to every mood. Personally, I was enamored by the house music gently playing in the background, adding an extra layer of ambiance. We were lucky enough to be ushered into a quiet corner by the fireplace, which lent a cozy intimacy to our dining experience, contrasting with the buzz of the main room. Service was flawless, attentive yet unobtrusive. As for the food, every dish was a symphony of flavors. The ceviche Bonito was a testament to balance, each bite bursting with freshness. The pan-seared foie gras melted on the tongue, a delicate touch that was simply divine. Now, let's talk about the Chilean sea bass. Yes, the price tag may be astronomical (it is IMHO, $78), but it's worth every penny. It was hands down the tastiest fish I've savored in a while, leaving me longing for more even as I finished the last bite. And then there were the braised bison short ribs and gratin dauphinois—a match made in culinary heaven. The ribs were tender and flavorful, while the gratin dauphinois was the epitome of comfort food done right. While the wine list is extensive, be prepared for the hefty price tag that accompanies each bottle. One word of advice: make a reservation. Trust me, it's better than facing a long wait time and risking missing out on this culinary delight.

Our waitress was amazing to us and the space is quite elegant. The ceviche was amazing the Denver Wagyu steak was very flavorful but had a bit of toughness that could’ve been rendered down if cooked a bit better. Will definitely be back to try more things.

A Stark Contrast: Betula, Aspen - Then and NowReflecting on my recent visit to Betula in Aspen, the contrast to my first experience there two years ago couldn't be more stark. What was once an amazing dining experience has unfortunately deteriorated in both quality and service. Two years ago, Betula was a highlight of my Aspen visit. The food was exceptional, the atmosphere vibrant yet inviting, and the service impeccable. This fond memory made my recent visit all the more disappointing. The heart of palm salad, a pricey specialty at $50, failed to live up to its cost, delivering an underwhelming experience. This was a surprising deviation from the culinary excellence I remembered. The main courses continued this downward trend. The special duck, previously cooked to perfection, was now undercooked and rubbery. The veal chop, a dish I had enjoyed before, was served raw – a significant and concerning departure from the high standards Betula once upheld.Compounding these culinary letdowns was the marked change in service quality. The waitress’s flippant attitude was a far cry from the warm and professional service that had previously enhanced the dining experience. The constant jostling by servers throughout the meal only added to the discomfort. The ambiance, too, has shifted. The previously refined and engaging atmosphere has given way to an overly commercial setting, dominated by loud house music that seemed more about creating a trendy scene than complementing a fine dining experience. In conclusion, Betula, once a gem in Aspen’s culinary scene, seems to have lost the essence of what made it special. From outstanding to disappointing, this recent visit was a clear indicator of how much can change over time. It serves as a reminder that maintaining consistency is key in the restaurant industry, and unfortunately, Betula has not managed to uphold the high standards it once set.

My wife and I celebrated our 49th anniversary at the Betula restaurant. The service was diligent and attentive. My wife had the Magret de Canard (Duck Confit), whi she liked. I had the "prime" steak , which was tough as shoe leather. I thought a prime cut of beef would be juicy and tender, but this particular beef was in my opinion of a much lower grade. Overall, I would rank the food as average and overpriced. The wine list is extensive, but the prices are astronomical. Only a handful of listed offerings are under $200. Abnd that's for a half bottle, mind you.The majority of the full bottle wines are above $200 and go up dramatically from there . I realize this is Aspen where real estate is expensive, but aside from this restaurant's vibrant atmosphere, there is little to recommend at the culinary level. I've had better meals at a fraction of the price.

The waiters are arrogant and the food is really overpriced. Used to be a "cool spot" for people watching but now it's half empty and filled with tourists. The last time we were in town they charged us for a dinner that we cancelled far in advance. Really disorganized.

We had dinner at Betula in the fall, just as the leaves were changing and the town was buzzing. Every other restaurant was lively that weekend except Betula which was mostly empty and everyone who was there looked like a tourist. Given the extremely high prices (maybe the highest in Aspen), and the obnoxious cancellation policy, I expected to feel like I was in a cool spot. Our meal was fine, except the tacos that were really fishy. The sommelier's snobbish attitude left us feeling embarrassed after we ordered a $100 bottle of wine. When the Betula opened it had the cache of Saint Barts but it has certainly gone down hill.

Tried Betula when visiting Aspen, and wow! This was among the best restaurants I've ever eaten at. The service was like a well-oiled machine, with everything taken away and delivered at precisely the right moment! I've never seen any place quite like it! On top of that, the food was fresh, creative, and full of flavor. The carrot salad and Colorado trout were the highlights for me. A live DJ filled the place with awesome music as well. The combination of these things made the experience truly unforgettable!!!
