This mojito bar is so much fun. Its tropical decor makes you feel like you're in the Caribbean. We had the plantains and MOJO fries. My friends had the strawberry mojito, and I had the coconut. I was a bit worried that the coconut Mojito was made with coconut water or cream. However, it was made with coconut rum. Which is my favorite way to make a coconut Mojito. Our servicer was attentive. He must be new as he wasn't very familiar with the way things were made. It won't stop me from coming back. There is a lot of parking and the bathrooms clean.

Came in today around noon with a friend.I've been wanting to stop in here for a while and I was not disappointed. The staff is polite, and we were seated quickly. The atmosphere is bright, energetic and airy. So many things on the menu looked really good.I had the plantain chips with guacamole, garlic aioli, and a Mango habenaro chutney. They were amazing. The aioli was garlicky and complimented the plantains well. The chutney was spicy, but not so much that it was overwhelming, and the guacamole was loaded with flavor.I also tried the Cubano with fries, and the sandwich was everything I was looking for. The pork was tender and juicy, and it was probably one of the best Cubanos I've had in a long time.The Tres Leche cake was good too. It was sweet, but not overly so, and the perfect end to the meal.I will definitely be back!!

Flavors and deliciousness were on point, but my fries were cold. Seriously though, aside from cold fries, everything was amazing. Fruit purees for their cocktails are made in house. The pork in every dish that has it is fall apart tender and melts in your mouth. Their Cubano is crunchy with the perfect blend of pig, cheese, and pickles. Even the fries had great flavor, just weren't hot. I will definitely be back!

Great late Valentine's day dinner. Was expecting to be disappointed. This was a second time we tried Cuba Cuba (first time was at the now-closed Highlands Ranch location). We were pleasantly surprised this time. We started with the CROQUETAS DE JAMON and EMPANADA with mushrooms and Manchego Cheese. Then ENSALADA CUBANA and PAN CON POLLO and shoestring fries doused with garlic mojo ... ending with a FLAN and a huge BANANA BREAD WITH ICE CREAM. Everything was really fresh and tasted high-end ... the crisply pulled roast pork (Lechon?) was seriously the best I've eaten. If you have garlic sensitivity - be prepared though - eat a fresh apple after you get home (if you have room). I enjoyed the mint leaves in the Mojito, but it seemed to lack any distinctive "punch" until I squeezed out the limes at the bottom and poured some extra simple syrup into the mix myself. Incidentally, our servers were personable and knowledgeable in menu items.

The only reason I am giving it a 2 is for the price difference for the same plate at the one in Denver. The Castle Rock one for the Pollo a la plancha is $21.00 the same exact plate at the Denver location is $14.50. We asked our server why that was, he asked his manager and told us that the portions were different but honestly they are the same. The server was extremely attentive and polite. I am from Miami, if you are looking for authentic Cuban food, sure you can come to the Castle Rock location, but I would drive the extra 30 mins and head to the Denver location for the same portions and cheaper price. We ended up paying $103. With the same order at the Denver location it came to $84.

Popular place that is always busy. Feels tropical inside like I'm on vacation or at least out of the Colorado cold. The staff is amazing!! Mixed drinks are wonderful! Happy hour 2 to 5 is a great deal!! Food is quick. Can't wait for the Patio to open this summer!! ?Dietary restrictions: They have lots of Gluten Free Options even Gluten Free Bread.
