We both got the quesabirria tacos- 4 tacos, consume, and all the fixings. These are fantastic. Double shells soaked in consume and then put on the flat top so they were an excellent texture and held all the ingredients perfectly. When i got home I had a bit of consumer after it had cooled and set up a bit and it was delicioussss. Yes, they deserve four s’s.El Chapin is a food truck/trailer in the parking lot of a butcher shop serving great flavors!! Wear some layers if you go during the winter bc seating is outside.The staff that served us was so nice and they were super quick. We will be back!Parking: Lots of open spaces when we were there at 5:30. Spots are easy to get into/ out of

Very good Mexican food. The place is so cute with the two different trucks and the seats, looks very nice! The burritos were delicious, full of stuff inside and so hot! The sauces are also both very hot ahah. The tacos were delicious as well, but so small! We were expecting "normal size" tacos, but these were mini.Overall still very good, the prices are good..I would ask less for the tacos since they are so small but it's fine!

El Chapin catered our 80 person wedding a few weeks ago and they did and amazing job! We visited their food truck before hand and loved the tacos. Paula was great to work with with great communication. Our meal came with 2 types of meat for tacos, rice, beans, salsa and chips bar, churros and horchata. It was affordable and such a fun option. They were right on time and I didn't have to worry about a thing. I'll for sure visit their taco food truck again when I'm in Colorado Springs. Thank you very much for everything!

I am so so happy we went here. Being from out of town, I saw lots of recommendations from TikTok's. I saw tacos the most often being advertised, and El Chapín was showing up the most often. I LOVE food trucks and this one did not disappoint. The person taking our order was an absolute delight and talked about the food in a way that you knew he loved it too. My fiancé and I ordered the elote, carnitas street taco, and quesabirrias. It looks like the quesabirrias were seasonal but I think they should add it to the full menu. Absolutely delicious. I am a sucker for elote and theres was juicy and tart just how I like it. It's hard to mess up a street taco but theirs was extra delicious because the corn tortilla was perfectly soft and not soggy. There is a great outdoor area with covered and uncovered seats and another truck with American food if you are with a picky eater. Free jalepeno and onions with our meal.

Once again our visit from California had given us another wonderful and very tasty Mexican food surprise. Being from Southern California I would have never guessed I would come across a place with Mexican food that reminded us of some great places we grew up with in Boyle heights, east l.a. etc.This place was truly amazing. Please, anyone looking for great Mexican food that is authentic...this is the place you must try.

Ok, I have to edit my review now. We have been here several times since they opened and most of the time, it's all good. BUT, this is the 2nd time I ordered burgers that I had to throw away when I got home to eat it. This is NOT OK when I spent $28 for 2 burgers. The first time I let it go and didn't edit my review but this time I felt it was necessary.I ordered no sauce for my daughters. Usually, they add NO sauce. Today, the man slathered it in Ketchup, that one went in the trash, she won't eat it. Her fries were also burned.My burger was so overcooked that it was inedible. I don't want to spend this kind of money to have a burned, dry, hard burger. My fries are also not good. The onions, which we asked to be grilled, were still pretty raw.This is the 2nd time in the last month that this has happened. So disappointed.Love the new burger addition. Just tried it today! The buns from Sourdough Boulangerie are AMAZING! This will be our go-to for burgers from now on! I loved the fries as well.
