We've stopped by this food truck a handful of times and enjoyed it, but were displeased by the service we received today. We were on our way home from the Parker Rec Center and noticed the food truck parked in the church parking lot (along with 4 other food trucks, clearly some type of event going on). Half of their menu was not available when they started serving food. Got the Carnitas Mac. Portion wise, it was very filling. I wish the cheese was more evenly distributed. It ended up being more like noodles with flavored cheese on top.

Amiable vendor and excellent mac and cheese! They are the real stuff, these men! Jalapenos with crispy cooked bacon in my mac? PERFECTION! Simon made a lot of effort to give us delicious cuisine. Not to mention, he is a true gentleman and incredibly nice. If you see this food truck, you should stop because you won't be dissatisfied.
