I visit this sweet little shop whenever I am in Ft Collins. I love that they are rare bean to bar chocolate makers. They roast and grind the beans and make the chocolate in small batches right there in old town Ft Collins. Very few places in the United States do this. I order on line when I can't visit, but visiting them and sampling a chocolate flight is a rare treat!

I'm not picky with chocolate. I realize that most chocolate shops aren't top notch, they have emulsifiers, etc. However, Nuance is one that is up there with the Belgian and French chocolatiers. Lots of subtle notes, solid flavors. It seems for their truffles, their more creative blends are where they shine. Every time I've had a more run of the mill flavor, it didn't quite bring it the way the more out there ones did (i.e. snakebite, habañero cinnamon are a different level from a rosemary sea salt or ginger). The bars are excellent and the sipping chocolate is unbeatable. I can't think of a U.S. chocolate shop that can rival the quality of the ingredients here.

I like this place, but it sort of feels like you're back in the pandemic when you go in and the staff are wearing n95 masks. It's sort of a challenge to understand them giving the descriptions of the different chocolates. I will say, its not cheap, but the chocolate is amazing! Went on valentine's day and enjoyed a couple of truffles with my wife. Perfect dessert after our lunch out. I marked atmosphere lower, because they don't have much for tables inside the shop. Some of the seating is taken up with supplies. Not sure what that's about.

I will visit this chocolate shop every time I come to Fort Collins! The truffles are bursting with flavor, I love the pure ingredients and exotic flavors that Nuance blends together. The rich sipping chocolate is to die for, a must try.

Oh Nuance...where to begin! This spot has me writing love letters in my head. I came for the rich warm and delicious sipping chocolate and ended up trying the French Style Hot Chocolate. There is currently no indoor seating available and masks are encouraged so we got out cocoa to go this time around. We tried the spiced hot chocolate option and it was perfect to hold onto and sip as we walked around Old Town. When they do have indoor seating available, Nuance offers chocolate flights that are to die for and let you taste a variety of their wonderful small-batch chocolates. Everyone working is knowledgeable and friendly and service is quick. Looking forward to the return of flights but am more than happy to stop by for chocolates to go in the meantime!

It amazes me how many people in town don’t realize that Nuance exists never mind that they are part of a small cohort of bean-to-bar chocolatiers in the US. If you’re a chocolate lover, this place is quite the experience. Creative truffles and a wonderful selection of single origin bars. They also have a selection of cocoa powder which is incredible for baking. I highly recommend taking a stroll through old town on a chilly evening with one of their hot chocolates. They are also one of the few businesses in town who seem to be really consistent with public health measures (air purifiers, take out service, staff wearing masks). I appreciate that. Great chocolate, but their seating is constantly closed with stuff piled all over them. Only go here to grab stuff quickly to go.

It's ok. The chocolate is consistently good. Staff is extremely aggressive with "HAVE YOU BEEN HERE BEFORE" as soon as you walk in before you have time to close the door. Even if it's your first time, it's a chocolate shop. Most people don't need the business's history to figure out what's being sold. They sell chocolate. It's on display, you can look at it right there. The labeling and narratives about single source and processing and all that are everywhere, it's hard to miss. And if you have questions you can ask, they're good at answering. It's hard to make decisions and think about choices when staff is badgering you, though. The guy who seems to run the place is consistently kind of snippy. I like their products but do my best to get in and get out as fast as possible because it's a tense atmosphere.

Yes, it is a little pricey compared to other chocolates. Is it worth it? Absolutely. I ate raspberry chocolate and it was so fresh and yummy. My daughter finished all the chocolate by herself so I was only able to test the raspberry one. We also got chocolate coffee to drink and I enjoyed it. I haven’t tested the Dutch cocoa that I got, but I won’t be shocking if that one tastes good in my brownies!

I know this post is gonna come across stupid but I took my wife into your shop last night expecting a legit American chocolate shop. After buying a few chocolate bars we decided to eat them and come to find out it was horrible bitter chocolate. I can't believe I spent $28 on terrible chocolate. I hope they figure out how to make a chocolate that tastes good to Americans. No France.
