I gotta agree with Rusty here.. These guys are great. They agreed to sell me sausage casing for making my own sausage and were very friendly. I asked around to all the supermarket butchers and they looked at me like I was crazy.. Come on, you're a butcher, you should understand a man's desire to make some homemade sausage. The guy I spoke to mentioned they're tricky to catch if you stop by but weekdays 9-noon are your best shot.
Great sausage right around the corner. I recently discovered this place at the Louisville Farmers Market (Sat am's in old town) where you can pick up a variety from their booth. We haven't tried it all yet, but the brat's are to die for. Far better than anything I've had elsewhere.

Meant to write this awhile back! This place makes great sausages of all kinds. Their Andouille is to die for. Buy some and make Chicken, Andouille, Filet Gumbo or add it to Red Beans and Rice or cut some up and add to your Jambalaya. Comme c'est bon!
