This was our second time to Ruben's, and it is easily one of my favorites. Their fajitas are amazing and so are their margaritas. Staff is wonderful, very attentive.
I don't usually give top marks for any review as I think there is always room for improvement, much like for myself. However Ruben's is exceptional! The food is great at any time of the day! The wait staff is always friendly and hardworking. The owner, Alvaro is usually always there and will greet you as a friend. With other restaurants getting bad and expensive. Ruben's food, service and atmosphere is well worth it.
The food was okay but the service was lacking. One of my dinner companions needed something for her meal and had a terrible time flagging down our server. We also had to wait a long time for the server to come back so we could settle the bill.

Amazing!! Me and the fiancé came in to eat, and I wanna say Alan? Was our server (sorry didn't get his name, just looked at our receipt!) and his service was awesome! I got the drunk chicken with carnitas instead and my fiancé got the ramen Birria. SUPER FREAKING TASTY! Maybe it's just the 2 delicious margaritas in my system talking, but the whole experience was awesome. Can't wait to come in again!
Our first time here. Coming early on a Sunday, we easily found parking and a table. Service was laid back and friendly, allowing us to visit and leisurely enjoy our food. Margarita was very tasty, as was the green chile (just the right amount of kick), and the rice and beans. Crispy chile relleno was out of this world delicious! Waiter and other staff visiting/serving our table were great. My ideas for improvement would be to cushion the chairs (not comfy), add some ambiance (felt like a diner except for the great music), and don't serve canned mushrooms as your protein alternative. We folks who want meatless want quality, so fresh mushrooms would meet that--maybe try seasoning and air fry--delicious!

We moved to Northern Colorado a few years ago and have had a hard time finding great Mexican food…until now. Ruben’s is amazing. The salsa and queso are tasty and the Arambe with chicken is one of my favorite meals. The margaritas are awesome. The staff is friendly and fun to be around. The restaurant vibe is cool and energetic. We love Ruben’s and enjoy finally finding our favorite Mexican place.
