Romero's is one of the many Mexican/Southwestern style restaurants in Pueblo we haven't visited. So, we figured we should give it a try. We came early (we're old). There were only another couple in the place. Our server, a young woman, was pleasant and efficient. In the otherwise empty place, our order came almost instantly. It's clean and cheerful inside. A Mexican telenovella was playing muted on a TV screen. We ordered a specialty, the 'Rancho Grande'. It was a flat sopaipilla with meat, beans, cheese, tomatoes and onions. smothered in green chili. Lettuce topped it. The 'medium' chili was tasty, just the right hot. The serving was adequate, but not generous. My wife felt the meat was a bit sparse. In all, it was a competent dish. Romero's is, apparently famous for its burritos, particularly it's Monster Burrito. (I don't know if one gets a T-shirt for eating it) So, if one is looking for a decent local place, a bit out of the way, one should give Romero's a try.

All I got to say that green Chile is very very good it was hot and had amazing flavor like everything was very good from the bean to the rice everything was season perfectly I had a large combination plate and it was so so good compliments to the chef he’s doing an amazing job most definitely will coming back!!Kid-friendliness: Very friendly staff

My husband and I have heard nothing but good things about Romero’s, so we thought we’d stop by and give it a try, “Wow” no disappointment’s what so ever, not only was the food delicious, but the service was excellent, the waitress we had was awesome, I didn’t get her name but she was very good, so “Kudos” to her, she deserves a raise! ???

Ive had the rest, and ive had the best! -coming from denver ive had some great mexican food/green chili… but we found a GEM Romero's Cafe & Catering has blown them away! Dont get me wrong, theres a close ONE We love in denver, but romeros is by far the best!! If youre in the springs/fountain/pueblo or surrounding, go there- you wont regret it!!!We went back to denver to one of, what used to be, our favorite places. Dont know if they changed- or we’ve just found better- but i have to give credit where credit is due!! Romeros is GREAT food and as regulars, great service!My only complaint or suggestion would be more chili- i always order the chili cheese fries, and when we first started coming, chili was almost flowing off the plate, now i have to ask for EXTRA chili (on the side) because its a bit “dry” on the smothered fries.

I'm obsessed with the stuffed breakfast sopapilla. It's messy but worth it. The bacon is crispy, the potatoes are perfectly golden, the sopapilla is fluffy, and the sauce has just the right amount of heat. Seriously you have to try it!

I would highly not recommend going to this establishment. Very poor service and not very good food, it was ok at very best. Waited about 15 mins at the table with only 2 other diners at the whole restaurant, watched another group walk in about 10 mins after us and get there table chips, drinks, and food ordered before anyone even acknowledged our table. I will never go back there again.
