*This is a review for the food truck, not the actual brick and mortar location (Though I'm sure it delicious there too)!* I was in the area and I decided to stop at GastroPark to see what food trucks were there. I saw the Hindsight truck and was curious to try them (and hungry, too). After looking at the menu, my brother got the Brisket Burger and I got the Pork Belly tacos. If you know me, you know I LOVE tacos. Beef, pork, chicken, fish, I love 'em all. When I took a bite of that taco, my mind was blown. The pork belly fat melted in my mouth, the aioli worked well with BBQ sauce, the cheese was melty, and the pico de gallo was refreshing and gave the taco crunch! It was everything I wanted and more. Definitely up there with the top 10 tacos I've ever had. Burger was also delicious according to my brother. We also got cornbread which was very good. The staff is very nice too. I wish they would open a permanent location near West Hartford!!

Okay WOW, I had always heard amazing things about Hindsight, but our expectations were exceeded when we visited . The fact that one of the state’s best BBQ places is just 10 minutes from my house is insane to me! We did the platter with two meats and two sides, so we did the ribs and brisket. The ribs were tender and had a great bbq sauce, but the brisket was by far the best I’ve ever had!! Fantastic Mac and cheese, Texas twinkies, and additional sides of the flaming tots, cauliflower burnt ends, and coleslaw. The outside area was so beautiful, and I pretty much forgot I was even in Waterbury! My fiancé loved the moonshine based cocktail that he tried, which I thought was pretty unique. The staff was also so nice! Definitely our current top favorite for BBQ, and I can’t wait to come back ASAP!

Food is good but they forgot my pulled pork on a two meat combo that i got for takeout. i got home after a 15 minute drice and wasnt there. I called them back and they said they were going to partially refund me but never did. 10 bucks gone i guess, and just dont wanna bother risking getting takeout from them. Check your order before you leave people.

Love the food here!!! (The portions could b bigger for the price). We always do takeout but it looks like a nice place in the warmer weather to sit outside & eat.

Cool little place. The meat was amazing, baked potato was kinda meh. And it was st paddy's so the price for the corn beef was a bit steep. But I'd definitely go back.
