Small quaint setting. Confusion on the menu. We eat sushi a lot and sushi was listed under maki and they were $35 a roll and up! We saw people sit and then walk out after seeing the pricing on the menu. The starter came out quickly but then there was a long 20 minute wait before our sushi was brought and there were only 6 people in the restaurant. Very pricey but the quality of the food was very good.

The food was completely delicious, which, quite frankly, we were not expecting after the odd atmosphere. The restaurant is located on the second floor of the hotel, literally in the middle of a hallway of rooms. The restaurant itself looks like they combined two hotel rooms and made a restaurant- there are only 8 tables total. However, the sushi and ramen were shocking good. The plating was beautiful and the sushi was expertly made and fresh. The ramen broth was excellent, and the homemade noodles were impressive. The first impression wasn't great, but the food is worth a try.

We have been coming to this Hilton for many years. The last time we were here (prior to this) things were under construction and the sushi bar was being moved to the 2nd floor. We love sushi. We loved watching it be prepared in front of us when it was downstairs. We were extremely disappointed in our visit last night at Bonsai. The choices were sparse. And everything was pretentious. Its very weird where Bonsai is located. It's also quite ridiculous how they have the tables setup with so many glasses- I was worried about sitting down and knocking one of them over. We wanted typical sushi rules like the wonderful roles they use to have. (Volcano. Rainbow, etc). Instead we had pretentious selections. And don't even get me started in cost. But hoping for the best we ordered 3 of them- they were okay. They were NOT as good as the sushi rolls from before. Then there was the rolled up liquor menu in a gorgeous glass octopus placed in the middle of our table - as pretty as it was- our 25yo daughter was shocked she didn't recognize any of the listings- so she had nothing. And then when our waitress (who was wonderful) brought out our dessert- it was all we could do to not laugh. It was a Costco size sampling of ice cream. Yes, it was good. Overall it just doesn't compare to what use to be downstairs. We will have to look for a new favorite sushi place for our next visit.

This was a hidden gem! Very small, romantic environment. Excellent service.The food was delicious. We did the 5 course chef experience with wine/saki. Highly recommend the wagyu beef and ramen. Everything was great. Will definitely be back.

Amazing service everything you could expect. Beautiful restaurant with a great view. Food was ok but considering the price and atmosphere the food severely was lacking. I would definitely not return unless they gave more options or at least were not so stingy with the fish. What is normally a 9$ roll is over 30$. I expected higher quantity for price. I walked away wanting more but no other menu options. The sashimi was cut paper thin for salmon, but appoint for tuna. Not sure why.

Met at the door by a gentleman who was surprised we were there. No smell entering the restaurant. Staff was friendly but not knowledgeable. We order sashimi (2 pieces not 3) and found it to be warm and very thinly sliced. We left to find a meal elsewhere. Very overpriced too.

For the first time in many years our check included an automatic service charge of which we were not made aware. However, the Credit card receipt included the usual opening for a tip. So potentially we could have tipped on an included service charge. A long term client lost!!

The service (thanks Sean!) and food were excellent, comparable to other fine dining restaurants I've been to throughout the country.The location and atmosphere felt kind of weird, as it appears they took a couple hotel rooms (with no view) in the middle of a hallway and turned it into a restaurant. It's even more unsettling when you walk out after dropping $150 per person.The restaurant was empty when we went on a Friday night, with only our waiter and one cook working. Again, our server was great, but sitting in an empty, bright restaurant on a Friday night kind of makes you wonder...I do feel that Bonsai's unnecessarily inflated pricing and twilight zone-ish location would keep me from returning.

Don't bother... They should give us back our lounge, it would be better. So 2 years to reply? You took an executive lounge and changed the name and charged outrageous prices for mediocre sushi. It's not a restaurant, it's a lounge, shame on Hilton

What a hidden gem. Bit of an odd location (front door is amidst rooms in the hotel), but the food, oh the food, perfection. Small intimate environment with clean elegant decor. Tables not too close together. Good wine list too. We've been three times, and the service is always exceptional!
