Wow! An incredible meal. Wonderful couple that owns and operates is so friendly and very good at what they do. If you can make it here you should definitely join them for dinner. A culinary experience like no other on Maui. for Valentines dinner my wife and I decided to skip trying to decide what to have off the resort menu and instead went to Nylos for an intimate retreat in Paia where we got to sit back, lose ourselves in conversation, and enjoy the evening as the chef prepared and his wife served us through their delectable tasting menu. The food combines exquisite culinary ingredients whilst incorporating the finest local fruit/produce/proteins in the most deliciously creative ways. We will most definitely be back. Truly a hidden gem!
Easily the best food I have ever eaten at. The quality of the food coupled with the service was outstanding. Chef Jeremy and Paulina made sure to give you the best experience they could, providing great detail about the food and conversing with you between courses. As a Sous Chef, I have learned a lot just by watching the preparation and asking questions about the food, both of which Chef was more than willing to converse about. An absolutely amazing experience!

The food was excellent and gave so many different tastes and experiences that most people will never have the opportunity to enjoy. What a fantastic meal. If you are like me, and would rather spend your money on one really great dinner out than a few mediocre ones, this is the place for you. Ingredients were diverse, well-sourced and fresh, combined in interesting and delicious ways, with each dish like a little work of art. The chef and his wife provided attentive service. The Chef is a sommelier, and my husband appreciated the wine pairing. Six small courses were plenty, but not too much. This place is something special.

Jeremy Solon‘s magic lies in the reverence he has for his ingredients and produce, letting their natural flavors shine, never overpowering their exquisite flavors. His unadulterated passion for cooking and bringing his art to your table, creates an experience reminiscent of watching a glass blower add his colors and then mold and shape his creation. His wife Paulina, who runs the front of house, is an artist in her own right with her knowledge of her husband's talents, her art of conversation, and an ease that was warm and welcoming, creating a feeling of stepping into their home for an intimate dinner party.
