Great Chef’s Tasting dinner. We came here last year for my birthday and we were so impressed with the menu that we had to come back again this year. I will say the chef’s tasting this year was no where near as filling as last year though. We left a little hungry. Wine was fantastic considering I love Southern Hemisphere sauv blanc and they had a great one on the menu at the moment. For the price, it’s definitely something we can only afford once a year though.

I don't give many five stars but this place was excellent. Firstly the server at the bar took the time to let me taste a number of wines and made good recommendations. I had the pork tenderloin and some anti-pasto type appetizers and everything was immaculate and very tasty. Highly recommended.

The staff team, the owners - are all amazing people and they make the dining experience absolutely worth every minute. I'm always so excited every time I am there, and I can't wait to go back! I am very excited to see their continued success in 2022 and for many, many years to come. Absolutely amazing food, people, and community. This is an amazing Des Moines restaurant with top-notch food and service. Proof is an experience you won't forget! Highly recommended.

I tried their tasting menu. Portions are perfect size and each course was distinct and delicious. We also tried the wagyu steak and it was the best cooked wagyu I have had. It's a bit pricey.. but overall worth it for a special occasion.

We went to Proof for the first time and tried the tasting menu. It was delightful! We tried a few cocktails and enjoyed them all. The food was amazing! My partner and I loved everything, even it's that we hadn't expected to like. The environment was fun and the staff were so nice and made us feel very comfortable. We wish we could go back tomorrow!

This was one of the best meals I’ve ever had. We did the tasting menu with wine pairing and it was unbelievably divine! In fact, one of the courses was in the top 3 of the best foods I’ve ever eaten, up with Nobu in New York and Roses Luxury in DC. And the service staff was amazing- attentive, knowledgeable, friendly, and approachable. If you want to spoil yourself, run don’t walk.

Do not overlook the drinks as the cocktail menu is engaging plus the bartender is amazing - made one of the best Old Fashions I’ve had in quite a while. 100% looking forward to coming back.
Very nice dinner. We shared the beef tartar. I had the soppressini with pork belly and my husband had the scallops. Everything was great.

This place is always amazing! It’s our favorite restaurant in Des Moines Metro for outstanding flavors and unique dishes! The drinks and service are exquisite. We have been many times. We recently went for our anniversary and splurged with the chefs menu and an extra dessert! See the menu image to see what we had. The menu changes so it will likely be different when you go, but everything has been delicious.I wish they would bring the beet and marshmallow salad back - it was soooo good!

A delight for your tastebuds. The gastronomic and visual presentation is beyond compare. Visiting from Chicago, and having dined at most fine restaurants there, I would match Proof to most any of them. I would highly recommend the tasting menu or, off the menu, the Cordycep "Chow Mein" and absolutely the Carmalized White Chocolate Tarts for dessert. Executive Chef, Diego Rodrigue-Negrete and Chef de Patisserie, Megan Snyder, have chosen their two Chefs de Partie, Wesley Montoya and Jesse Paulsen very well. They are all creating new experiences I've never tasted before. Proof uses fresh and local ingredients, reasonably priced for the cuisine, presented in a soothing atmosphere with attentive (just right) servers. A special shout out to Adriane, our server who patiently attended us all night and answered all our questions.

The February, 2nd Saturday was very lovely. We added the extra wine pairings for $50/pp and one 2.5oz wagyu beef for $95. It wasn't inexpensive, but it was a fun date night on a special weekend. The waitstaff was absolutely amazing and knowledgeable - we loved hearing about the dishes and the details behind the wine. It was about 2 hours in total. Docked 1 star due to the serving sizes being on the small side for my husband - he was still hungry after.
