Love this food truck! Living in Fishers, we encounter them fairly often- farmers market, Nickel Plate Amphitheater concert, and at Ruoff. I've personally had the brisket breakfast sandwich- definitely a fork and knife type of sandwich but so delicious- and the tatchos. The tatchos had both chicken and steak- both cooked to perfection- not chewy or gristly. I will eat at this food truck any day over typical concert concession-style food.

AMAZING food. Worth the trip to I Indy just for this. I had the opportunity to eat at this food truck this past summer and was amazed at how awesome the food was. Farm to table food was very evident by how fresh everything tasted and the creative menu was second to none. I would highly recommend this food truck and will return to Indy just to find them again!

I'm so glad 5280 Bistro was at Indiana on tap even Friday evening! We just had dinner but when your sampling massive amount of beers sometimes you have the case of the munchies or you just want a snack lol it was very cold evening and I can see why people hesitated to go outside and wait for there food. There was a couple of waiting in line and I didn't even bother to look at the menu til after ordering. I asked if they had tacos and BINGO that was what I was ordering. It didn't take long at all! I literally had to wait 5 Mins. Food came out fresh and hot. It was crispy tortilla on the outside and lots of meat inside. I appreciate this taco so much because it wasn't messy. Like you could eat it and nothing will fall out like a regular taco. For $10 you get 3 tacos and chips on the bottom. Not bad for meals on wheels and served fresh. Definitely want to try the other stuff on there menu. I believe the truck is family own and the name of the truck has something to do with there roots back in Ohio. I definitely want to give this truck some love! I am a huge taco girl with roots from CA so I had my fine share of tacos and I love what this truck has to offer. Can't wait to try there other menu selections again!

Joe's food and hospitality is matched by none. He has such a unique twist on classic dishes that he serves with such warmth and hospitality.You can see and taste his passion for this business. We were so impressed with Joe and his food, we asked him to cater our wedding. They knocked it out of the park!

Sampled a 5280 PB&J at Fishers Spark from the food truck. I am a new loyal fan! The pork loin was juicy and very flavorful. The bacon was thick and slightly peppery (+) and the plum jam really topped it. All on a pretzel bun with kettle chips. Thanks for braving the heat so I could enjoy this delectable sandwich. Since your food is served at Mashcraft, I am sure I'll see you soon!

Great food very reasonably priced! Great location in the strip mall with McNamara florist.They earned their culinary and business stripes via having an outstanding food truck downtown Indy. That was where I first tried their food. Highly recommend!

I tried their 3 special kolsch macho tacos via food truck. What are they? Braised chicken and steak, (I think) with different topping than on the menu (also I asked them to hold the salsa verde), corn tortilla and nacho chips. The braised meat was better than I expected because I am not a big fan of the braised flavor. The chips were crispy.

Delicious Colorado-inspired vehicular cuisine. I had the pb&j sandwich. Wow! My wife had the tot-chos (think rather tots covered in deliciousness) and couldn't stop raving about them! So delish. And they even take debit cards.

Great food truck with unique food options that are phenomenal! Everything I have had off the menu was fresh and full of flavor. I will be eating from them again and recommend you give them a try as well, you will not be disappointed!

Awesome elevated comfort food menu. I was scrolling through my pictures from my trip to Indy and I saw a photo of a menu. Upon closer inspection, it hit me that I took the pic because I wanted to explicitly call out its awesomeness in this review. It is chalk full of dishes that sound like they came out of my dreams. Here are a couple noteworthy examples: 5280 PB & J - ok, this one didn't come out of my dreams, because I don't eat pork, but literally, if I discovered this two years ago before I went semi-kosher, I would be all over it. Roast pork loin, pepper bacon, fig & plum jam on a pretzel bun?! Yes, I did just rewrite the menu for you, but it should be shared with the world. Mr. Potato Head and Cheese - I once wrote has there ever been a match made in heaven that beats truffle and French fries? The answer is now yes, truffles and tater tots. This dish also includes grated parmesan and chopped garlic. Every other dish sounds as good as these, but I'm going to have to let you read the menu yourself. We ended up getting 4 Real Kettle Chips. I was not hungry. I had a ginormous omelet for lunch and I was still having problems buttoning my pants. Yet, once I saw these gorgeous kettle chips, I had to try some. And by some I mean I ate way more than my fair share (I wasn't even the person who bought them). They are generously topped with parmesan and at $4 its an absolute steal. Everything else on the menu is between $7 and $10, which is such a great deal for the quality of this food. We ran into the food truck outside Bier Brewery. Since this was the first brewery we stopped at during our Indy Brew Bus tour, I'm confident in saying I was still sober enough to truly appreciate the food. The owner of the bus is super friendly. I could tell he cared about providing great dishes. This continues my theme of reviews where I'm basically commanding everyone to support local! If you run into this food truck, you won't regret ordering a meal.
