“The Box East Bay is a gourmet taco stand that opened in Warren, Rhode Island in June 2019. It was founded by Matthew King. A graduate of the Culinary Institute of America, King has 35 years of experience working for a major contract food service facility that focused on the leisure and entertainment segment. Eventually he decided that he wanted to be his own boss. King came up with an idea to develop food trailers that can convert to multiple concepts. For his first project, he intended to sling pizzas on his Italian-made wood-burning oven. His girlfriend convinced him to focus on tacos instead. King's tacos were essentially a hybrid between traditional street tacos and Neapolitan wood-fired pizzas. All tortillas are handmade by himself with a mixture of wheat flour and corn. He converted a vintage former horse trailer into a retrofitted food stand outfitted with a removable wood-burning oven. King cleared out an area on his front lawn to permanently park the trailer. The operation was dubbed "The Taco Box" when it first opened, but by July 2022 it was renamed "The Box East Bay" to reflect its growing menu. My family and I visited The Box this past August while we were driving back home from a week-long trip to Cape Cod. We stopped along the East Bay Bike Path in Warren for a bathroom break and to grab some frozen lemonades from Del's. We looked across the street, saw The Box and thought that some street tacos would make a delicious lunch. We had no idea what we were in for. The food stand is surrounded by a beautiful garden and some picnic tables for customers to sit at. We started off with a plate of "Chips & Pico with Guacamole": something quick to get our appetite going. Then my wife and I ordered the "Shrimp Taco" (wild caught Gulf of Mexico shrimp, red onion, shredded cabbage, cilantro, lime vinagreta) and "Street Corn Taco" (flame roasted corn, black beans, charred sweet mild chilies, avocado, lime garlic mayo) to share as well as a "Cheese Quesadilla" for our son. We were shocked when we received our tacos. Not only were they huge but they resembled Neapolitan pizzas more than tacos. We folded them in half and ate them like a taco. The tortillas were crunchy and charred on the outside but soft and chewy on the inside. These tacos were spectacular; just busting with flavor from the fresh ingredients (some of which were grown right in the garden). We are so happy that we discovered The Box by accident and would definitely stop again the next time we find ourselves in Warren!“
