UPDATE:I've been back many times...How in the world is this not listed as the best restaurant in Springfield & Theos continues to get top places... Unreal---------------Good lord! That was utterly delicious.Finally someone in New England that knows how to spice something.Will be back MANY times over to try the whole menu.

After all these years growing up and living in this city finally made my way downtown for dinner to try chef Wayne's Cajun food. Unfortunately he no longer has a restaurant. This is a pick up and to go location near Mardi gras and 350grill. I ordered quite a few things off the menu for dinner for my family and we enjoyed it all . The only downside was it was a bit salty and that's why I gave it 4 stars instead of 5. Other than that it was quality food.

As a displaced Cajun I can say, without a drop of doubt in my mind, that Chef Wayne and the team are doing the lord's work. I got the sausage gumbo. Ive eaten at Cajun spots that claim to be "over seasoned for new England" well that's just a fancy way of saying "under seasoned". Chef Wayne's gumbo? Perfectly seasoned. My mouth is still tingling 30 minutes after eating; that's what you want!I can't wait to try the other menu items next time I'm downtown.
