I've been here once before when they first opened, food was alright but there wasn't enough sauce or cheese on the pizza. Tried to come back tonight to give it another go, we arrived at 6:30 to put our name on the list because we assumed there would be a wait. They said there would be a table between 7:30-8pm. We got the "we're ready for you text" to head over to the restaurant at 7:36. There was no table ready for us, and they said we could hang and have a drink until there was. We thought we might grab a drink at a bar next door but they told us it would be really soon and to not leave. We all ordered a round of drinks and proceeded to wait over 45 minutes, standing in the corner where there were two stools for the four of us but at least we finally found a good spot to wait that was out of the way. The server came over and asked us if we wanted to order food while we were waiting and we said no we would like to wait for a table. He came back 10 minutes later and told us that there would be two spots at the bar and a two top opening up, but we would not all be able to sit together. After waiting an hour at this point. We gave up and left close to 9pm, super hungry now with very limited options for finding dinner so late. The server never once acknowledged that there was any mess up on their end or inconvenience to us, no "sorry our bad", no "hey guys it looks like we're not going to have a table for you tonight, maybe you should go somewhere else". He actually told us not to get a drink somewhere else and also tried to get us to order dinner when he knew there was no table for us. As someone who as worked in the industry for years, I can think of a dozen ways I would have handled the same situation. The service and communication at this restaurant is absolutely horrible.

Incredible pizza napoletana. After living in Italy we were worried we wouldn’t find somewhere of quality in New England. This is it. Highly recommend!!! Recommend the Buffala!!

What can I say?....This place is awesome. The pizza is perfect. Soft, chewy crust with little charred bubbles. The toppings are not your run of the mill Pepperoni and sausage etc. They have some interesting combinations that are very interesting and delicious. I highly recommend quanto basta.

Cute little pizza shop. The pizza was flavorful and we liked the dough. The people making the pizza seem to be the owners, they are invested and you can tell. We had a pistachio lemon ricotta pizza that was delish. We think they should have a salad on the menu and a few more NA options for beverages.We are not giving it five starts because the lighting is too cool and too bright, we would recommend a 500 lumen bulb and 2700k or even 2400k for a warmer vibe. There are also some warm glow bulbs by GE that dim to warm which could be handy. We’d recommend trying one and seeing how you like it.Also there was a very cold draft by the window.Good addition to the neighborhood, congrats guys!

Small shop on Congress Street, away from the most commercial areas but an easy walk from most of them. Neapolitan pizza that's very light, droopy, bready, and leopard-spotted, and the base--or undercarriage, as a well known pizza aficionado might say--is the key component. Not only is there flavor from the dough, but it really grabs the oven fire flavor as well, with dark spots both above and below. Toppings are minimal, or as the translation of Quanto Basta goes, "just enough." If that's not enough, this pizza isn't for you, but I really liked it. I attacked the menu noticing that some pies have tomato but not cheese (like the "Rossa"), some have cheese but no tomato ("Limone"), and some have both ("L'Amatriciana"). So that's how I checked the boxes, going with those three. All were fantastic. I'd be lying if I said I wouldn't want more of the toppings, but these were still excellent pies that showcased the dough and the oven. They're light enough that you can eat a whole one. Friendly staff. Casual but sophisticated atmosphere suitable for a low key first date. All-Italian beer and wine list. Sometimes you gotta give up the Allagash for once and be taken to another place. This place will do that.

Our food was fabulous, and the customer service was even better. Attentive and friendly staff and a warm inviting atmosphere. Glad we stopped by before our trip ended, and can't wait to come back next time we're in town.

Quanto Basta has recently moved to a brick and mortar from full time food truck and i couldn't be more excited!!!Order at the register and then find a table among a few inside or out in the little patio out back. It definitely gets busy, so go right when they open to avoid waiting :)The suppli (kind of like arancini) are piping hot and delicious, and the pizzas are all incredible. Make sure you add the burrata to your pizza for a lil extra fun. Spritz's were the perfect pizza night addition.Service is extremely friendly and welcoming- I definitely recommend popping in for a bite!!!
