Unfortunately it wasn't as good as I expected. The brisket was chewy, chicken was dry, mac n cheese was dry, no flavor. The green beans were ok, mashed potswere a little salty, cole slaw was good.It was a food truck so maybe that had something to do with it. I'll probably never eat from here again. Needs improvement!!

While the selection of food was good and also the number of sides and drinks (full bar), I found my order of half rack of pork ribs unimpressive. Not much smoke ring, overly salty with rub still too prominent. Good selection of sauces. Pit beans were just ok. Cole slaw was good and a bit different taste. My go to joint for BBQ in Rochester in still John Hardy's.

Really disappointed in our experience with their food truck this weekend. A HS or college aged girl was running the ordering window, and the service left a lot to be desired. There was no smile, didn't seem to know the menu, was explicitly rude and rolled her eyes when my family handed her our CC to pay. This was our first experience, but will also be our last. Pork was good, but greasy. Corn and beans were fairly good. Chicken and Mac were dry/overly smoked. Better options elsewhere.

We ordered online because the first time I called, they put me on hold for 15 minutes. Before I was put on hold, I said I wanted to order food from the food truck and they didn't tell me I was calling the store, they just put me on hold. I also had tried to call 3 times before ordering online but the phone went straight to an a voicemail that had not been set up automation. When I ordered, I thought I was ordering from the truck online but wasn't which is partially my bad but I also think it would be beneficial for them to put the food truck number on their site. I went to pick it up from the truck, was told very politely that my order was at the store so I made the half hour drive to the store. When I was almost there and after trying to call the store 11 times and getting the same automated voice response each time, they finally called me to ask if I was coming to get my order. I explained why I was late picking up and that their phone wasn't working and they just said, "that's interesting. How much farther away are you?" Kind of rude but whatever. I got there and they started packing up our food which I really appreciate that it was fresher considering the communication issues. The fella there came up and apologized for the phone not working and told me it had been down for the last hour. I would not want my phone going down for an entire hour while during dinner rush so I suggested using call forwarding and he said he would look into it. Picking up was pleasant and the family (I assume) seemed nice. When I got home, we ate and the meat was decent. My fiancé ordered the sausage and I ordered chicken. I do wish there was a bit more meat to the dish but I still enjoyed it. He really enjoyed the coleslaw and Mac and cheese but thought the sausage was a little dry. The Mac and cheese seemed kind of overcooked to me but I had a half hour drive home too so that probably didn't help. The roll and cornbread muffin seemed store bought and really weren't anything special. The muffin was tiny and dense, I only ate maybe half of it before I tossed it. I'm not sure if we will try this again but I wish the owners and family best of luck.

I ate True Smoke 3 days in a row because the quality and quantity is amazing! The ribs are my favorite. They fall off the bone, so moist!The amount and vast difference in spiciness of sauces is awesome. I prefer smoky and sweet, but my wife loves spicy! We can both be happy!

This is by far the best BBQ I've ever had. The brisket and pulled pork were absolutely perfect and juicy and full of flavor! The side of bacon Corn was extremely impressive as well!

I was disappointed with my visit... I got some potato bowls and a couple sides. The potato bowl said it had potatoes, cheese curds, shredded pork, and gravy. There were no cheese curds at all and when I went in and asked they said they were mixed in to the potatoes. There were absolutely zero cheese curds at all. I will never pay that much for some instant potatoes again...

I moved here from the south and one thing I’ve missed was good barbecue. I finally tried this place everyone has been telling me about and I am 100% happy. The owner also went out of their way to get chicken gizzards and make them for me even though it’s not on their menu, turned out amazing, even better than the gizzards I would get down south. Customer service was awesome and the food was even better. I highly recommend eating here, I will definitely be a regular now.

I was in town with my 13-year old son for a basketball tournament. I went looking for a BBQ place and True Smoke had the best reviews. The restaurant is a great little place with 5 tables. Two friendly, young girls took our order. We were presented with a bag containing a very cheap napkin, knife, fork, salt and pepper. If I have to eat with plastic utensils, at least provide a little better quality! While there, they seemed to be doing a nice amount of take-out and Grub-Hub/Door Dash business. They brought out my son's pulled pork sandwich and cheese sticks. While I waited, he pretty much finished his meal before I received my meal. I tasted his food, and the pulled pork was uninteresting. Then my food came out. It was just average BBQ. Not a lot of taste to the ribs. They were dry rubbed - so I dug in without sauce to get the experience they intended. Kind of bland. I added sauce - was just ok. I feel they are trying to spice their meat to appeal to the crowd who doesn't like a hint of hot! Minnesota bland. The brisket was a little bit tastier, but not as flavorful as I would have expected. My meal came with 2-sides, and a tiny store-bought dinner roll - served with honey butter. The dinner roll was a weird choice. There was plenty of food. I ordered BBQ Cowboy Beans (bland) and hickory flavored fries (didn't taste the hickory flavor). I hate to leave a neutral review, but that was my experience.

How has it taken me so long to try this place?! Seriously, their BBQ and sides are the best I have had in a really long time and I'm from the south! Back home in Jacksonville we had such variety of good BBQ to choose from and I've been so disappointed since moving to MN. We ordered the Cluckin Heiffer which had a variety of meats (chicken, brisket, turkey, sausage) and omg it was amazing! It came with sides so we ordered the mashed potatoes, corn, and smoked Mac and cheese and every single one blew me away. I also ordered collard greens (it's a southern thing and I'm obsessed) and holy crap I was so surprised! Haven't had good collard greens since my last trip south. Also tried the fried okra (drool) and coleslaw (mMmM). My kids loved everything too but were obsessed with the cornbread muffins. I literally got 1 bite before they stole the rest! Oh and this is a delicacy but my husband specially ordered fried gizzards (again, a southern thing) and I haven't seen him that happy in so long! This place has definitely become a new favorite and one that will be earning our money every week for as long as they're around.
