Definitely a hidden gem in Trenton, NJ. Best Brisket & Baked Beans I've ever enjoyed. Excellent, attentive staff. Cozy spot to sit down & enjoy your meal after shopping the indoor farmers market.

Overpriced and Overrated ! And the young girl touching her hair while slicing the Brisket was a disgusting move.

This was my first time eating at this BBQ joint located inside the Trenton Farmer’s Market. Their products (Brisket, chicken wings, pork) are smoked right outside the stand so you are getting them fresh from the smoker. There are three tables that you can eat at. One is a high top that seats six and the other two are regular tables with one side pushed against a wall, so eight additional seats. My order included two pounds of brisket ($23/pound), one pound of pulled pork ($17/pound) and one pound of slaw. At first glance, I was going to order the baby back ribs but then noticed the $18 price was per pound and rather than for the entire rack. What I Liked: - The Seize the Deal offer was a game changer at $25 for a $50 food voucher - The smoke flavor on the brisket and pulled pork was strong but not bitter - The bark on the brisket was about as black as you will see. They use hickory and wild cherry wood. - The brisket (cut across the grain) and the pulled pork were tender - I sampled the baked beans and they were better than average. I hear they mix 3-5 different peppers with them. - They had pickle and pepper (Hot, sweet) slices at the condiment bar What I Did Not Like: - There was no smoke ring on the brisket since the fat cap was left fully intact. So, if you wan the full smoke flavor you have to eat the fat. - One pound of brisket was cut with the grain and resulted in strings of meat! - The brisket was dry and relied on the fat cap juice from above to add moisture - The brisket in play here has both the flat and the point in play since they do not remove the point (fat cap) and use it for burnt ends. This is extra work that are avoiding because making burnt ends requires additional steps in the process. - The pulled pork was a bit salty for me but not over the top salty - The slaw was more of a fresh salad and not traditional coleslaw - They did not offer collard greens - They only offer two BBQ sauces. The sweeter one had too much of a honey taste. The spicier one could have had been better flavor. - The $18/pound price for the baby back ribs is over the top expensive. They weigh 1.5 to 2 pounds and are usually up to 80% bone. If you are lucky to get 1/3 (33%) of pork off the bones, that is $54/pound, Whaaaaaaaat! My Portly Pigg rating is 8.8/10 Oinks for the pulled pork and My Prime Minister of Beef rating is 8.1/10 Moos for the brisket. Without the Seize the Deal voucher the ratings would drop because of the higher price point, to 8.2/10 and 7.8/10 respectively. The brisket for me is always the money shot and weighs heavy when I do my overall score. My overall score was 8.1/10 (with voucher) and 7.5/10 without the voucher. Note, this place was ranked #19 by the Star Ledger earlier this year citing “Hambone Opera’s pulled pork — supremely succulent — is among the best I have sampled on my barbecue journeys, and the brisket oozes fatty goodness”. Personally, I don’t think anyone in Texas is losing any sleep because of NJ BBQ being a competitor.

I've eaten at this place several times and the food is usually good, very good barbecue and sides. This is only a review of the brisket the last time I went there. It was dry and not very good only because it was the end piece that may have been sitting there for a while under the heat lamp. I suggest if this is the case to cut off the end and maybe start off fresh where it would be juicy and tender? I don't know, I have had three different briskets at three different barbecue places in this area in the last 2 years and all of them were bad and dry maybe because they were warmed up. Brisket is meant to be tender Juicy and Delicious. I will be back and definitely take a look to see if the exposed brisket side looks dry and if so I would ask for a different cut and hopefully they give it to me

Ok I've eaten here twice in the past few weeks. I tried the ribs first, delicious. I'm not even a huge meat lover but the smell of it in the market pulled me in. HOWEVER, I went back again another day and got chicken wings. This time, it was pretty bad. There were little hairs on half the wings (i got about ten of them). They could have been actual human hairs, or maybe hairs from whatever brush they use to brush the spices on. I'm not sure. But it was definitely hairs and not part of the chicken. Either way, that's not something that I want to consume. On top of that, many of the bones were broken inside. I won't be going back here. I only need to find a bunch of hairs in my food one time to learn my lesson.

I moved from Texas 15 years ago and just found out about this place. Crazy good food. A proper cornbread, melt in your mouth brisket. Pulled pork and ribs are not to be missed. My family's life is now complete with proper BBQ.

Well, the food is overpriced! I got brisket and coleslaw, frankly Brisket was absolutely tasteless, 0-10 flavor, coleslaw is below average, spent close to $40 for platter, ate about a 3rd and trashed it, I dont recommend!

Best BBQ I've ever had, words can't truly convey how delicious the pulled pork and smoky spicy beans are. The aromas, tastes and textures are divine. Can't wait to try more menu items!

Tried Hambone today for the first time. I did a sampler of brisket, ribs and pulled pork - all delicious. The ribs have a nice kick. The pulled pork was juicy and delicious. The brisket was super tender and flavorful. The service was fast and friendly. The ambiance was clean and typical of a real barbecue restaurant- not a chain. This is a great place for barbecue.

I planned a whole day around going to this place, and was not disappointed. The pork is excellent. The mild sauce is good too [I did not like the spicy]. My lady's chicken was good, not at all dry - but, com'on, its chicken - have the pork. A positive is that they serve their bbq on a real roll, not broiche or one that flats to nothing as soon as you squeeze it.

The brisket is some of the best I've had in NJ. Loved it!
