I've tried the entire menu and there's not one item I didn't enjoy. The New Mexico Mac is a must try but the Truffle Mac is my favorite. Unless you're some kind of hulk of a man the portions are a good size, I can never quite finish my meal. I can tell this good is made with passion. Thank you Good & Thorough, I'll be back for more!

My wife and I had their truffle mac and mushroom risotto at Marble this week. These guys make good food! It was really tasty, and the portions were great.

I'm the last person who would think to buy mac n cheese while dining out...can't you buy boxes of organic stuff for like $1?! Man, I'm glad I tried this cute little food truck. The munchies hit hard one afternoon at Marble and my friend and I decided to split the green chile cheese mac. This was SO GOOD. Super creamy and rich without being cloying. Bread crumbs added great texture and chile was perfectly seasoned and in proportion to the rest of the dish. The serving size was generous, enough for 2 people to split and have a hearty snack. I'm a fan of this truck and their chefs now and have a new appreciation for the humble but oh-so-good mac n cheese !

Good and Thorough is as much concept as food. The old Chevy Stepvan isn't unique in itself, but the sound-insulated generator can run on petrol, natural gas or bio-diesel! The ingredients are sourced, as practically as reasonable, locally. This means seasonal menus, keeping patrons a little more connected to Mother Earth! My first dish of comfort is a little outside my usual: Mac and cheese. THIS Mac and cheese is Very zesty with hot NM Green Chile! The bacon and fresh scallions ad a little more comfort and eating it from a compostable paper bowl with a compostable bamboo fork (as opposed to a styrofoam and plastic who's Halflife is comparable to nuclear waste) mitigates against the guilt that can accompany "comfort food." Plus, the guys come back a few moments after delivery to see if I'm enjoying it (I am!), a sure sign one of the local ingredients is Love.

Portion size was made to feed a 5 year old. I ordered the pork belly and when it arrived it was in a small box with very little food. I asked why it was so small for the $11 I paid. The answer I got "It is because we use quality ingredients" I should have just gotten the new mexico mac and cheese. Over priced for what you get, beware.
