Long line, but sooo worth it. Workers were friendly and kind, and the food was amazing. I had the pork ribs and the brisket, as well as their hatch green chile mac and cheese and street corn. All was tasty and well-made. Will definitely be going back in the future. A word of warning: if you have your heart set on getting something specific or anything in general, you absolutely need to show up within the first hour of opening, otherwise they sell out very fast!

Best barbecue in New Mexico. This is a must have every Sunday you can. All the food they offer here is delicious packed with flavor and made with love. The meat is juice and full of flavor. If you think you like barbecue you will hands down love this place. Salayandia barbecue is owned and operated by a wonderful couple who are just the nicest people you will meet. They offer a first responders and military discount. Desserts are also something you should not skip on they are all delicious so good better then any other place you will ever find in this town must try.

Everything I was looking for in a brisket sandwich and then some! Juicy, flavorful, thick cuts with a nice char and a great smoke ring. The large brisket sandwich is packed with plenty of meat, as any great sandwich should! BBQ sauce was my style, touch of heat, molasses sweetened. Didn't get any heat off the green chile mac, but the chicharones crumble on top was a nice touch. Above all, the customer service was excellent, a rare find in Roswell.

The fact that they sell out every weekend just proves my point. The deserts and sides are just as amazing. You can't go wrong with the potato salad and the green chili cornbread.
