After reading the reviews, I was excited to try this place since it's close to home. I ordered the Chile relleno plate and posole with "chicken". The posole is the reason for 3 stars. Unfortunately the rellenos were not fully cooked and very tough. There was no batter on them either which was strange. The red and green salsas are not good, they tasted very strange. And the rice-yuck. I'm definitely not the pickiest person but this was no bueno.

Was craving some Mexican food and gf and I decided to give Panchos a go. Keep in mind we love to eat vegan food occasionally (my gf loves it). Took a bit to find because it was night time and they have no lit signs and the plaza was pretty dark. Upon entering our server let us sit anywhere we wanted. They did have some tables unavailable of course due to Covid reasons. Anyways we sat down and waited about 10min before getting menus. They only had one server and I understand to be patient but it seemed like the workers weren't very attentive. They had about 3 other tables there. Service: Definitely was lacking. Menus took forever to get to us and after food being delivered that was the last time our server even spoke to us. Didn't ask if we were okay and didn't refill our waters. Food: Food was very meh. My gf got the 3 street taco combo and I got the "Chicken" enchiladas. Now for my enchiladas on the menu it didn't mention anywhere that they were spicy. Would have been nice if our server mentioned that they put sauce from hell on it. Now keep in mind that I LOVE spicy food and can definitely handle my fair share. These enchiladas were UNCOMFORTABLY spicy. Like I'm talking some Thai food level 10 spicy type deal. There is no reason for them to be that spicy. I didn't eat all day and was starving and still couldn't finish my last one because my mouth was on fire. Inside: Inside was clean and they followed Covid guidelines. Overall I was not impressed and will not be coming back here. There are much better vegan Mexican food places out there. Disappointing.

Great Mexican food made with a variety of plant-based ingredients. Friendly service and quickly prepared take out orders. Daily specials that we frequently have for lunch!

So I'm sure it's is probably really good Vegan food. Not my my cup of tea. Clearly well made just not for me.I decided to update this review from a 1 to a 3. Several reasons, it's not their fault I thought Vegan food was disgusting. Sauces were very good and the staff were really nice and helpful. The food was clearly not my cup of tea but I felt a 1 star review was unfair.

Recommend? Yes.I got 4 single street tacos: asada, al pastor, chorizo, and carnitas; south fish tacos, nacho cheese nachos, a side of chorizo, and horchata.Of the 4 street tacos I liked the chorizo and the pastor most. I found those to be the most flavorful.South fish tacos tasted very similar to what I remember. It’s a decent sized serving as well.Nacho cheese nachos - I added the chorizo to this to make it a chili cheese kind of thing. The cheese wasn’t overly salty. My non-vegan sister found the cheese to be a tad sweet. I really liked their chips though. It is thicker than the chips at most other places so it picks up the chili cheese without breaking. Yes, that’s very important. Lol.Their salsa, both green and red, are spicy. Very spicy. Perhaps I’m just a weakling. Haha. The horchata was good. It’s milky with a hint of cinnamon.

What I like to call a small moms and pops restaurant. The environment is very nice and the staff are friendly. Pozole soup is a must!! Found my new place to eat.

THE BEST VEGAN MEXICAN FOOD I HAVE EVER HAD. I damn near licked my plate clean. The rice and beans I ordered the street tacos + a potato taco , and my boyfriend got the wet burrito ( spicy!) , we both LOVED it! This will 100% be our Vegas food stop from now on!

I was a little apprehensive about trying this restaurant, I'm not Vegan, but my daughter is and was very excited to go here. I was pleasantly surprised by the options and how great everything was. The street tacos were fantastic! The staff was friendly and they're very careful about taking Covid precautions.

I really want to love this place, but can't. The portions are good and the price is fair. What kept me from giving more stars is the food is so inconsistent. The first time was great, all the other times, they left out the sour cream and another time it was disgustingly salty. Also, every time we pick up food to go, there are customers inside not wearing masks. Yes, there's indoor seating, but I've seen people who weren't eating, standing there waiting, and they weren't wearing masks. Given that the place is small, it's very concerning for not just the customers, but for the employees as well. Another reason why I didn't give more stars is the hours are inconsistent. For example, if they're suppose to close at 7pm, sometimes they'll close at 6:30 or 6:45 instead. One time, we got an email about Taco Tuesday and called to place an order, but they closed way before 7pm. With all this said, I gave 2 stars because the food was great the first time we ate there. Unfortunately, each time we went back, the food was worse and worse. It's time for us to look for another place.
