We (Lucy and I) stumbled upon this place while sectioning a good chunk of the Hudson Valley Rail Trail. She spent many a summer at her grandparent's farm in Highland, and knows the area.We stopped in at The Hudson Valley Sausage Company because Lucy recommended it. Great choice. Very small retail area consisting of a few coolers. They specialize in sausage and hot dogs. We opted for the Italian pork sausage with cheese and parsley. There were numerous other choices. First time going to the local butcher and we loved it. Burgers are amazing and sausage too . They gave us big bones for the dog which he loved so much. Definitely recommend the dry meats and steak . Wear a mask .

I was expecting a fresh meat case to peruse not shopping out of a freezer case. Based on other reviews I did buy a few packs of sausage but unless it the mist fabulous sausage ever, I probably won't go back.
