Not our first visit, we are Carillon members. Service has degraded over the years, food is still pretty good but with a very limited menu. Every meal is over-loaded with fries. We went for lunch on a Thursday and it was not busy but the service was poor. There was one waiter whom we never saw after he brought our food and another four people standing around talking behind the bar. None of them ever checked on us or brought more water or tea. Spent over $100 for four people at lunch time, not a good value but understandable with the cost of inflation. Might bring guests back for the atmosphere and history but will not go back for the food or service.

This venue captivates with its authentic charm, thankfully paired with modern washrooms— a relief for those wary of old-fashioned outhouses. Spread across two levels, it offers a unique selection of beers crafted from historical recipes. The Spruce beer stands out, delivering a truly one-of-a-kind tasting experience. Opting for a taster is wise; the beer's rich molasses and roasted barley lend a complex flavor profile and full body, while the initial spruce aroma and subtle aftertaste intrigue the palate. This historical ale, dating back to America's early settlement days, showcases the use of spruce both for its bitter taste and vital vitamin C, once valued for medicinal properties during the harsh winter months.

This brewery has so much potential! The space itself is beautiful and unique. The outdoor patio area is a great spot when the weather is nice, overlooking the Carillon Park train.But the beer selection is lacking. There were only 4 types of beer available: a cider, a sour, a Christmas beer, and a Kolsch. The website menus need to be updated to the current offerings.

Sauerkraut balls, wurst platter, spruce ale. Used to love this place, can't recommend it anymore. The spruce ale and sauerkraut balls were good. The bratwurst was terrible (and way overpriced at $17 for a platter that was mostly fries). It was dry and TASTELESS. No bad flavor, no good flavor, no seasoning, no flavor AT ALL. Like cardboard. Does the kitchen even know what they're putting out? And while the staff was pleasant, they didn't come around to ask if the food was ok (it wasn't), or if I wanted another beer (I did). Three staff members behind the bar, 2 talking to each other and 1 talking to the other girl at the bar the whole time after I got my food. What a waste of a good concept.

I visited Carillon Brewing this weekend and really enjoyed it! To begin with, the building is gorgeous! It feels like stepping back in time into an old beautiful brewery complete with the smell of a wood burning fire for baking fresh bread. I tried the Porter for my brew. It was pretty good. Was it the most complex Porter I've ever had? No, but it was definitely pretty good. I'd probably stick with the IPA next time. We also noticed that there were fresh sourdough loaves coming out of the oven and decided that we had to have some. This was a very dense, delicious loaf of bread that we just tore apart at the bar. If you'd like, they are happy to cut it for you and bring butter. Overall, I would definitely recommend Carillon Brewery and I'm looking forward to returning in the future.

3/5 Stars. Great atmosphere and environment with an old timey feel. Giving 3 stars just because of their hours. Their hours are a little odd and I found it hard to find a good time to go while they were open. They are also closed a lot for private events so I suggest checking on their Facebook page to see if they are going to be open when you're going. During the week they close pretty early and are not open very late on the weekends.

A rip-off. By the way, they don't always prepare food according to the menu description. The Carillon Dog did not say it has mustard, but I will be damned if they still put it on. I hate the smell and taste of any mustard. It was not worth $14.00 dollars with a side of potato chips. A rip-off!

Food had no taste. The staff stood behind the bar and acted as though it was a hassle to answer questions. You had to order your food at the bar ,but they still expected a tip!! Worst service we've had in a long time.

This was my 2nd year visiting. Carillon Brewing company was decent first year but this visit was very poor service, was told 40 minutes and it was over 2 1/2 hours. Not all food came there was confusion about missing meals. Very disappointing start to the night. Expected better service and food for the overpriced meals!

Very rude! Was treated differently with my wife. Didnt have any alcohol in my drink. Just wanted to enjoy the holidays never stopping here again

Here for the first time. I'm not impressed! The people behind the bars seemed to be bored and goofing around while myself and others needed a beer. At the same time, another customer came to the counter to ask for a manager because of lack of service and 2 hours for food to come out. Would definitely not come back. Photos are just an addition to what is wrong. If there is not enough staff, then shut down.
