I had chance to stop by Ramen Isshin in Vaughn and am delighted to report that they deliver a solid ramen experience. Instead of my usual choice of black garlic ramen, I opted for the white shio ramen this time, with extra noodles and meat. (Was very hungry at this time..!) Accompanying the ramen, I ordered gyoza and karaage, which were outstanding as always. The soy sauce that came with the gyoza was particularly noteworthy, enhancing the flavors beautifully. While the sauce for the karaage was fairly standard (Ramen Buta-Nibo does a standout job with theirs), the texture of the karaage itself, which is mildly crunchy yet soft, was executed perfectly. Reflecting on past experiences, I must admit that the ramen was more memorable before the pandemic, not only at their College St location but also at the now-closed spot inside Kiu in Downtown Markham. Back then, there were simply no complaints. Today, while the soup wasn't as rich and wholesome in hotter soup base as I remember, I appreciated that they made a concerted effort to include all the essential toppings like eggs, bamboo shoots, and meat (although a lot thinner nowadays). The fact that the soup maintained its integrity, even with extra noodles added, shows their commitment to quality. The service was notably attentive and seamless, despite being assisted by different staff members throughout the meal. The restaurant's AC was in full swing, a bit much for the day's weather but undoubtedly a plus for the hotter days of summer. This was later turned off when I asked the server if it could be accommodated. Overall, the visit was very enjoyable. Their dedication to maintaining a high standard, both in their dishes and service, makes it a place worth returning to, despite any minor fluctuations in the traditional flavors I once loved.Vegetarian options: Miso (soy) soup is available.Dietary restrictions: Those who have difficulty with gluten might have limited options in this place. For dairies, be sure to check if the broth involves any form of dairy.Parking: Could be challenging to find parking during lunch rush. Also, the traffic trying Vaughan Mills mall adds extra challenge to getting in and out of the plaza.

I came here for a Yelp event, but was not directed to a specific page so I'll leave my review here with this transparent disclosure.I came here on a Thursday afternoon, around 1:30 pm. As a result, it wasn't extremely busy but I prefer it this way. Excluding my table, there were about 3 other groups. We walked in, greeted by all the staff, and brought to a table meant for four but just the two of us. I liked that they tried to spread out the customers since it wasn't busy, which made the place feel spacious and more comfortable. The seating was quite comfy and the place looked very clean.We were instantly given menus - a physical drink menu but asked to scan a QR code for their ramen menu, then waters were served automatically as well. The server was quite attentive, coming back in a timely fashion to take out order but never made us feel bothers and/rushed. We were always asked if we wanted to order anything else, rather than just assuming we wanted the bill (i.e. we didn't feel rushed to leave even when finished our food).We ended up ordering the following:豚骨”辛”胡麻塩らーめんSPICY WHITE SESAME SHIO 18.9100% Sea salt, home made Isshin chilli sauce, bamboo shoots, green onions, wood ear mushrooms, soft boiled marinated egg, pork belly cha shu, chilli oil, with thin wavy noodles.This bowl was for my company, so I only had a sip of the soup. I liked that there was a hint of spice but nothing that kills. It was fun to watch my dad crush the sesame seeds which were meant to be added to the soup for more flavor.ガッツリこってり醤油らーめんKOTTERI RICH SHOYU 18.9This is a classic rich bowl of Isshin Shoyu Ramen. Comes with bamboo shoots, nori, marinated soft boiled egg, pork belly cha shu, green onions & thin wavy noodles.Though I'm a huge fan of spice. I opted for something a little "clearer" and this was perfect. The broth was rich, creamy, and flavorful but not too salty and I didn't feel extra thirsty after. I love their noodles, which had a good chew to them. My only request is I wish there were more toppings as the ramen only came with two thin slices of char siu (less than other places I've been to at the same price point like Kuma in New Market) and half of an egg.Beautiful presentation for their food.Overall, a lovely experience and a cozy spot to come visit! It is tucked in a corner of one of the plazas located outside Vaughan Mills Mall, making it very convenient to access with ample free parking.

Average ramen restaurant. Nothing special. The broth was warm, not hot which was a little disappointing. And for a $20+ bowl of ramen I expected more than 2 very VERY thinly sliced pork. The service was great. Overall, this is a solid Japanese restaurant.

The Vaughn location stands out for its cleanliness and spaciousness compared to the College location. The servers are all very friendly, and the food is amazing, especially the tasty shaved ice with a smaller size option. Highly recommended!

In our quest to find a ramen shop reminiscent of our experiences in Japan, we stumbled upon this gem, and it exceeded our expectations. The broth was incredibly flavorful, and the choice of flavors we picked was outstanding. This place is exactly what we were hoping to find. I highly recommend it.
