Super cute shop- a good amount of seating! Coffee & baked goods are all great as well. Staff has always been very friendly the few times I've visited! Don't expect to be super productive if needing a strong WiFi connection- it's pretty tough in that regard. Other than that, it's quiet enough to work well and has a great ambiance! Would super super love a better WiFi connection though :)

I came in to grab an espresso here yesterday after the parade and the coffee and customer service here is superb, bar none. Love the cardamom flavor, it reminded me of my grandmother’s Christmas cookies! To those of you who are put off by a smiling face; it is not a business’ responsibility to sacrifice their Freedoms and Liberty to cater to your mental illness. If you believe a business should enforce masks, it is actually YOU that is putting politics over your own health and freedoms and that is sad.

I found that Proust does charge $.50 additional for their plant milks, but that bummer was placated by them offering hemp and oat milk!
I ordered a pumpkin spice, oat milk latte, and that syrup had the most incredible flavor - asked and they said all their syrups are made in house!
I felt comfortable asking if the syrups were vegan - yes to all except the chocolate and caramel. Friendly staff; cozy environment!

I think Proust might serve the best coffee in central Oregon, not just Redmond.Every time I go, the latte or Americano (usually both) are exactly the same. Perfectly pulled espresso, and delicately stretched milk. It's the highest standard I can think for any coffee shop. No matter when you go, you can be assured you are gonna get the best product they make.I've actually not tried any of the baked goods, but from what I hear they are yummy.It's location is great, since it's on the main strip downtown, with both outdoor and indoor seating.I would say they have a little more competition now that Tite Knot opened (check them out too! Proust is closed on Sunday, or if you want more of a relaxing outdoor seating vibe). Still if you are passing through and you only have time for one coffee Proust is your best bet.
