These taste exactly like the handmade tamales of my childhood for which there is no recipe. They are ephemeral and perfect and defy culinary logic with their simple perfection. Two makes a satisfying meal but three would have been better. They also sell esquites and champurrado that I will try next time I'm there. Make a pilgrimage or stop by next time you're in northeast Salem. You won't be disappointed!
