First time visitor and the food was fantastic. Brisket was tender and flavorful, ribs were tender and bbq sauce reminds me of KC. The only downside was I didn't like the jalapeño cheese sausage. appeared to be big chunks of cheese.it did not reheat well and greasy. It is outside so be prepared to stand in line. I will definitely add it to my list of acceptable bbq places.

Absolutely lived up to all the hype. We loved the Birria Tacos which we ate there and took home some of the ribs which were equally fantastic. We will be back regularly for sure especially since there were dog friendly places to eat.

There will be a slow-moving line. It is worth it!!! This BBQ is top tier. Get a beer, stand in line, it's not that bad.Hop and Sting Brewery has great beer, a nice outdoor patio with plenty of seating as well as indoor. Just outside the patio area is the Vaqueros trailer where you queue up, debate what to order, and get a tray of delicious food. You MUST get the brisket at a minimum. It melts like butter in your mouth. Delicious food!!!

Food was good quality BBQ overall, even compared to recent Franklin, Terry Black's and Interstellar BBQ joint visits in Texas. I did find the beans to be a little watery and Birria was just OK, however the brisket & ribs were tasty, cowboy potatoes were good and the sausage had a nice consistency with good flavour. Queue wait time was 1 hour 20 minutes on a cold Saturday, half an hour after opening. I believe a recent award nomination may be the reason for this. The serving system needs ironing out when it's this busy. Both servers were polite but organised chaos springs to mind inside the truck. We received extra birria tacos, but no pork burnt ends. I'm sure they would have sorted it out, but it was busy and we didn't realise until later in the meal. This is constructive 'criticism'. It's a hard game I personally know, and the main things of food quality and customer service are on point. Plus I loved the BBQ sauce!Definitely check it out. Plus it's at brewery so beers in line ?

Stopped here after getting into town. Close to the airport and the perfect atmosphere for my husband and I. Food is incredible and absolutely worth trying. Chef is apparently a James Beard Finalist and that should tell you everything you need to know. Definitely try the tacos!

I seriously don’t know how this place has such great reviews. Food has zero flavor. We tried brisket, ribs, beans, and Mac and cheese and it was all 1 out of 10. And I’m by no means a picky eater, but this bbq was seriously disappointing. Save your money and go to Hutchins or even dickies bbq.

Vaqueros BBQ catered the rehearsal dinner at Hop and Sting Brewery for my daughter's wedding on 11/10/23, and it exceeded our expectations. Trey, Jonah and the team did an amazing job with the food and service. They served brisket, turkey and birria tacos, and all 3 were perfect. Highly recommend for catering as well as great BBQ at Hop and Sting!

Trey is the best!! I can't say enough good things about this place! The food is absolutely fabulous! My stepson always orders from here, so I had the pleasure of meeting tray at one of their parties. Since then we have developed a great bond. Anyway, I was able to actually come down here to his restaurant and shadow him and see how the food is made. I actually got a chance to see how the sausage was made. It was outstanding and I can't say enough. If you want some good Texas style barbecue, you have to come to this place! Seriously, there's no place that does it better!

I got ribs , brisket and 2 sides(cucumber salad and Apple Gorgonzola Cole slaw) -Every single item ordered was absolutely awesome!! The ribs and brisket were extremely tender and the sides to die for-The service was very good despite it being cold and rainy -I highly recommend Vaqueros!!

Top notch Q. Get there early. Don't think to yourself "oh they'll have all of it near closing time". Nope! Good does run out, but that's a good thing! That's how you know they're doing their job well. Had the blessing of being able to try ALL the items on the menu. Surprisingly I'd say you get the best bang for your buck with a sandwich and taco pairing. Unless you just want it all, then by all means, have it all. I can't say their better than some well known places because like wine, bbq is in the eye of the beholder. But to me! This has gone in my top 3 places to get bbq in Texas. Well done y'all. Keep on cooking, and we'll keep eating!
