First and foremost. This family is gifted With putting out amazing barbecue and side dishes. We hired Rossler’s for catering my family’s event. They did not disappoint. I wish they could’ve heard all of the wonderful accolades from our guests on how wonderful their food was.Secondly, Character! They were well prepped, professional, and arrived on time. Here’s a very important part. A portion of our order was not utilized. And when I reached out about it, there was 100% accountability. And I was told by the owner when we were ready for the missing component. To just let them know. Well, it’s been about six months since our event. And we haven’t had a gathering large enough to justify reaching out until this beautiful Easter weekend ahead of us. Not only did the owner Remember us, but he hand-delivered what will be thoroughly enjoyed. come Easter Sunday. It’s hard nowadays to find true customer service, and to be valued as a customer. By this act, it only reinforces that we are committed for any of our functions requiring barbecue that Rossler’s bbq will be our only choice.

The best barbecue in Texas! Everything is amazing! All made fresh and served with pride and love! These guys are awesome and the food is absolutely amazing! The brisket is the best I have ever had! This is absolutely the best BBQ I've had in the Killeen area, and definitely top 5 I've ever had. Rossler's absolutely needs to open a storefront, but I'll definitely be back.

I was pretty skeptical. I've tried every BBQ joint within 100 miles and my expectations were low. I'm completely blown away at how good everything was. Every dish was perfectly cooked and seasoned.

This is a food truck, with a picnic bench waiting for those who are not doing takeout. We stopped here for lunch about an hour after the opening, to discover that they were already sold out of brisket, ribs, pulled pork, pinto beans, and cheesy poblano grits. So, instead of ordering a four meat plate with sides, we had to settle for two (turkey and a jalapeno sausage) with sides of collard greens and potato salad. We also ordered a side of elote pasta salad, a cold dish which turned out to be the highlight of the meal ($31.68 in total). Clearly, one needs to get here very early to have a chance to sample the whole menu.Both meats were lightly smoked and offered decent flavor, but they did not elicit wows from us the way the elote pasta salad did. Similarly, the collard greens were decent; we appreciated the fact that they weren't drowning in vinegar. The chunky, mayo based potato salad was a good, traditional version of this American staple-- but again, recalled one that we have eaten in dozens of other restaurants nationwide. In sum, if you are in the neighborhood and have a hankering for BBQ at mealtime, our 96th 'cue stop in Texas and 391st on a nationwide odyssey currently embracing 35 states is worth a visit, but it is not what we style “destination 'cue.”

It's a food truck with limited outdoor seating. Two picnic tables. Quick service - They serve the food really fast which is awesome! We came around 12:40 and Some of the menu items were gone (like the pulled pork and pork belly bites). Overall a decent Bbq place - The sides really gave this place a boost.1. Brisket - 7.5/10 - Good moist brisket2. Pork Ribs - 9/10 Their Ribs Stole the Show! It was delicious. 3.Beef sausage - 6/10 It was good but nothing special 4.Turkey - 6/10 - Very soft, but not much flavorSides:1. Hawaiian Mac - 10/10 Delicious and my favorite side! 2. Elote Pasta - 9/10 This was a close runner up3. Grits - 7/10 pretty good but not much of a grits fan4. Baked beans - 8/10 Beans were nice warm and tasty

I constantly google BBQ near me and I never saw Rossler’s Blue Cord BBQ until one day they popped up in my search results. Which was such a coincidence because I live near where they park in Harker Heights and I never realized I was driving by a bbq truck, let alone a great one! Not even a great bbq truck, it’s just great bbq in general, better than most restaurants!I have been to 5 of the top 10 bbq places in Texas and I’d put Rosslers #3 In my personal rankings of best bbq I’ve ever had and by far the best bbq I’ve had in the Killeen/ Waco area. What a coincidence that just a few weeks later they’d make it to the Texas top 25 list! All of their food is delicious and they earned it, not alot of places can get bbq and their sides right, but they sure do. I love the brisket, it’s amazing (I’ll mop your truck with a toothbrush for the rub recipe) the Ribs are classic Texas but I loved how they sprayed lines of bbq sauce on them, for flavor and presentation. Every side we had was phenomenal and I truly enjoyed my visit. I will return every time I can. And I will and already have recommended this place to alot of friends and family. Absolutely great people, and better food 10/10

Had been wanting to try our Rossler's for awhile and finally got the chance today and sorry it took me so long. I've been able to visit quite of few of the top bbq establishments in the area and Rossler's can go head to head with any of them. Their food and service is amazing! We got the 3 meat plate (brisket, ribs, and turkey) with 2 sides (kale salad and cheesy poblano grits). The brisket was outstanding! Incredible bark, great flavor, and cooked perfectly. In my opinion in Texas, you judge a bbq place by their brisket first and Rossler's blew me away. The ribs and turkey were great too but no doubt I'll get some brisket every time I come back. The kale salad was good but the grits were next level. I didn't know what to expect but they were fantastic. If you are getting multiple sides, start with the grits and then go with what you like. You won't be disappointed and I doubt you will be with any of the other sides. Only my first time and we've only tried 2 but both were good and I bet everything else is too. We also tried the peach cobbler and I don't say this lightly, I think it was the best I've ever had. It was outstanding and I've heard a lot about the banana pudding so can't wait to try that next time I go.I've heard a lot of good things about the Rossler's and all the interactions I witnessed while there today only confirmed them. They are great people, really care about the people, care about their product, and it shows it all facets. Can't wait to get back and have some more of their delicious bbq. Word is definitely out about them so don't wait. You won't be disappointed.
