To maintain a good reputation as a restaurant, meats and seafood must be fresh. The customer doesn't mind paying a little more for quality. As an appetizer we ordered a pork rind and they gave us an old, reheated one. The skin was rubbery instead of crispy. The seafood casserole tasted like fried seafood, they were not fresh, they were definitely from a bag. Maintain freshness and quality in your menus and you will regain popularity.
