To say that the food offered at Diego's Food Truck is delicious would be an understatement. There is something very special happening here, and I believe more people need to be made aware of it. Passing by it may not seem like anything other than the average food truck, but the appearance is deceiving. We have a young talented chef named Diego, very charismatic and charming, who apparently has no formal culinary training, who through trial and error has forged some of the best tasting food the RGV has to offer. There is no pretension here, just great food, great ingredients and great presentation. To miss out on the opportunity to sample this food would be an error. I'm expecting many more great things from this chef. ? Diego, if you read this...the Valley needed you to do this. I patiently await a restaurant. ?

The food truck is really, really good! The food tastes awesome, and it's like eating at a fancy restaurant but in a truck. Big thumbs up!
I had their burger, which was absolutely delicious and a hibiscus tea. I went alone, just to have a nice quiet dinner. However, they took forever to charge me out the time I took to sit down, and eat, was much shorter than what they did to charge me for the food. Other people arrived ate and left before I did. I was completely ignored. After I finished my food I had to get up and flag them down so I can pay and leave. Very inconvenient. Shame because the food was good, customer service is key, and because it was lacking I will not return.

Steak, Veggies, Pork, Everything Farm to Table, & an extra special once in a lifetime tour of the Provenza Cattle ranch. WOW!- I’ve never had a NY Strip I could eat, I eat Filet Mignon period. Diego changed my mind about his!! The steak was phenomenal! The veggies were amazing! That salad!! Oh and the dessert...wow! Diego came out and spoke to us for quite some time at the end of the night and he’s such a personable and passionate person. Wish I lived nearby all year long but he’s definitely going to be my go to for dinner while I’m in the RGV.- Our time at the Provenza Cattle ranch was AMAZING!!! I didn’t get pictures of dinner because I was too busy stuffing my face LOL!!- Who would have thought Vietnamese was so good or that I would have gotten it in the RGV? Not me, but that totally happened at Diego’s. Unbelievable.
The food here is not your typical food truck food...it's what you might find at a fine dining restaurant. We ordered several dishes, and every one was so flavorful and delicious. Highly recommend! You won't be disappointed ??
