The food had no flavor. Store bought tortillas. Waitress acted like she hated her job. The prices are ridiculously expensive. So many better places in Waco to go to especially for the price. Do not recommend whatsoever.

Having lived in Texas for most of my life and married to a man who's been in Texas his whole life, I've had a lot of TexMex. Veronica's is some of the best. Fajitas, chimichangas, or fish tacos are my usual go-to for TexMex, but every once in awhile I get a mad white sauce enchilada craving-- wherever I go for one of these, there's usually something missing or not quite right to me-- not enough sauce, tough tortilla, tasted like the sauce came out of a can, etc. So, what. a. delight. when we visited Veronica's for the first time a few years ago and I saw "Sour Cream Enchiladas" on the menu. I'd never had one before but its description was exactly what I wanted. AND IT WAS. Perfect amount of perfectly crafted tangy but creamy sour cream sauce on top of a perfectly stuffed with moist chicken and cheese enchilada. A perfect bite includes a swipe of the included refried beans and rice-- HEAVEN. After discovering this magical enchilada, I now look for it on other Mexican restaurant menus and am always excited when I see it. Often times, however, the sauce from other places tastes strongly of a condensed soup and the chicken can be dry. Always makes me appreciate the well-crafted enchiladas at Veronica's. Other yummy entrees to try are the Pork Chops and the Beef Quesadilla (beef quesadilla is huge so don't order the larger portion unless you're particularly hungry or sharing). The salsa and chips are super tasty, too! Have to try my best to not fill up on these before the entree comes-- I usually fail, but it's worth it. This place is authentic, where the locals go, and the service is friendly and attentive.
