I cannot remember every piece of bread I have ever had in my lifetime, but I certainly remember Coyle's Focaccia bread weekly or daily or routinely, well does it matter it is amazing! The focaccia bread they make is wonderful in every way, texture, chewiness, flavor, quality, and crunch. I love how this bread surfaces every mouth texture to the forefront for a truly unforgettable bread.Here is a list of must tries from Coyle's menu.Any Scone.Cakes, any of them.Cream Filled Coconut puffs – this is probably, in my humble opinion, the best tasting thing on the menu. But I am midwestern.The coffee is great, especially since they are not a coffee shop by trade.The last thing I recommend is to please go to any of their events where they are offering something new to try. It will feel personalized and made for you. Beautiful bakery and I will see y'all next time.

My favorite place!! It’s a bustling and adorable place with kind people, incredible pastries and superb coffee. I got a delicious soy latte with honey and cinnamon, which was perfect to dip my cardamom kouign-amann. I also had the cream currant scone with bergamot jam. It was delightful and I just loved seeing all the happy customers. I also bought jam and graham crackers as gifts for friends. No notes, you gotta try this place!!

Stopped in to this cozy bakery saturday for a coffee and pastry, there were three of us. No tables for three, two tops and the window bar, which was fine. The person behind the counter explained with enthusiasm and honesty each pastry, also telling us about the tea menu. The young woman making the coffees was not very nice. The pastries were very good, a passion fruit tart was delightful, tart and a depth in the crust that was beautiful. The shortbread with a layer of deep chocolate was small but rich and good. The Quince tea was excellent with lovely floral notes. While sitting and eating a woman came in and was told they close in one minute. After she paid I asked if i could buy the last piece of cheesecake and the last tart to bring home, i was told the register was closed, which I found hard to believe as it was a minute after the last customer paid. Then a customer popped their head in and was told they were closed and asked what they did with the pastry, the girl behind the counter said, we donate them or give them away. I found this very odd since i had just asked to buy them!!!!!!! Then the person came out from behind the counter and locked the door, and the unfriendly coffee maker cranked the tunes. No polite notice of ladies we are closing in a few minutes, nothing, just cranked music and chair stacking for the last few bites of our pastry goods. Had we been told they close right at 3 we would have opted to either take away or go somewhere else. Instead we were turned off by what might have become a regular spot. There are too many bakeries in seattle to treat people poorly. We were not thanked when leaving, no goodbye come again, nothing. Too bad, good dessert, lousy customer care. If you want a pastry, and want to sit alone, and allow yourself 20 minutes before they close, this might be your place.

I really wanted to like them.Stopped by a morning to get some goodies and do some research for a future venture. I settled on a chocolate croissant, a rosemary cretzel (croissant/pretzel hybrid), a flour-less brownie and their seasonal fruit croissant. They were all stuffed in a small container that opened the minute I turned around.Unfortunately, only two of the above managed to tickle my fancy. The chocolate croissant was not as flaky as expected, doughier and the brownie was so salty I could only eat two bites at a time.The cretzel's rosemary taste was barely there but it was pleasant to eat. The seasonal fruit croissant saved the day a bit as it was the tastiest if all four.The size of the items is also remarkably smaller than other shops in the immediate area.The place is clean, the staff is friendly, there is inside and outside seating. Frozen items are also available for you to bake at home.Another visit is warranted to compare but I will not be rushing back, unfortunately.

I love this bakery and go most Sunday mornings before the crowds. Everything they make is divine—there’s a select menu of perfect pastries. If you go later, the sandwiches are amazing! And the special items they do seasonally, like apple cider donuts and mince pies, are not to be missed! A lot of other bakeries in Seattle have more hype, but I don’t think any of them beat the quality of coyles! Plus they do wonderful coffee drinks, in ceramic and glass cups—truly a special place ❤️Vegetarian options: Many pastries are vegetarian, but not suitable for vegan/gluten free folks.

Don’t know if I just went during and off day or what. But I was surprisingly disappointed. Pistachio pastry was stale, kouign-amann was also stale and weirdly crunchy (in an overbaked way) with overwhelming ginger taste. Cake slices were pretty good though, light and not too sweet. Employees were also really nice.

I bought scones with cheese it was good, The croissant was good as well. but I find the choices of food very limited. Wish they could use their talent to create more pastries and bread other than scones and croissant.

Finally made it here. A bit inconvenient if not in the area. However, pastries were smaller in size (which is fine) and about $3-$5 which is reasonably priced. Tried the scones (Arizmendi in SF is still the top scone of choice in my opinion). The cherry almond croissant is flaky almost like a croissant bun swirl. Apple cider muffin was petite but nice.

We live within walking distance of seven places to purchase coffee/tea beverages plus pastries. Colye's Bakeshop is my absolute favorite. The scones, croissants, cakes, galettes, cookies, and tarts are all magnificent. My favorites are the scones and extremely flakey croissants. They taste perfect with a cup of London Fog or a Latte. Several of their delicious baked goods are available as frozen takeout treats for at home baking. I have had great success baking the oat scone with dried cherries and ginger, plus the cream scones with currents. Special seasonal treats are available throughout the year. My favorite so far, is their pumpkin pie; the best I've ever tasted. Everyone who works at Coyle's is super friendly; service is wonderful!
