This large cafe has a great atmosphere with lots of seating options, each with its own mood and feel. Seems like a great place to hang out. The menu however is disappointingly built around everything wrapped in bubble waffles which are not that great. It's hard to decipher the dishes, firstly, and then underwhelming when they show up. Bland and forgettable. The Mexican Mocha I was looking forward to ended up being heavy on the cayenne and unenjoyable. The chocolate croissant was top notch.

Overall it is a cute little place. The atmosphere is nice and cozy and I felt welcomed to come in. I ordered a mango smoothie and cinnamon roll waffle. I really enjoyed the smoothie however the wait time even for drinks here can be quite long. The food is good but is missing that wow factor that would put it on the top of my food ranking. Along with this, the price of the food is just a little steep for the taste. Overall this place is unique and cozy but may not be for everyone.

The atmosphere is welcoming and it's a beautifully decorated building. Service is very slow when it comes to food and beverage. The food is amazing I love the crepes and the bubble waffles! They have a good variety of menu items too.

The Exchange is a such a unique and fun take on a coffee shop in downtown De Pere. The menu is extensive and there's something for everyone. However, they're famous for their bubble waffles. I have yet to try them, but I can't pass up a crepe when it's on the menu, so that's what I have ordered both times I've been. The food is made fresh and absolutely delicious. You order at the counter and the food is brought out to you. Very large space, plenty of seating, and a super cozy vibe. I have yet to meet someone who doesn't love this place!

I had high hopes for brunch here based on reviews, but the food was just meh. I had scrambled eggs which were incredibly dry and flavorless. Turkey bacon that looked like it had been deep fried it was so crispy, but again not much flavor. The fruit side was very good. Ripe strawberries, apple and banana. It was also beautifully presented.My daughter had a sausage sandwich and egg on a bubble waffle. It was ok, but not especially memorable. The hazelnut croissant was excellent!Seating on a Saturday morning is difficult to come by, so be prepared for that if you go.Food took about 30 minutes to arrive, but we were warned about that and were fine visiting with friends.I feel like there are other much better choices for lunch, so won’t be returning. Give it a try and see for yourself. You might love it. We found it rather forgettable (except for the croissant)

A Visit to The Exchange Coffee, Mercantile & Eatery in De PereIntroduction:Recently, my family and I had the opportunity to visit The Exchange Coffee, Mercantile & Eatery located in De Pere. I'd like to share our experience with you, highlighting various aspects of our visit.Coffee Temperature:One notable aspect of our visit was the temperature at which their coffee was served. The coffee at The Exchange was served at a scorching temperature, well above 220 degrees Fahrenheit. While I prefer coffee brewed within the 195 to 205-degree Fahrenheit range for optimal flavor extraction, it was evident that The Exchange had a different approach. Although I didn't challenge their method, it did deviate significantly from what I consider an ideal brewing temperature.Pricing:The Exchange Coffee, Mercantile & Eatery had a policy of charging an additional 3% on credit card payments. While this practice is not uncommon in businesses facing financial challenges, it's worth noting. It serves as a reminder of the economic hardships many businesses face, and it's not something I found unreasonable.Food Quality:One of the more disappointing aspects of our visit was the quality of the food. Although the presentation of the dishes was appealing, the taste left much to be desired. The flavors were lacking, and it seemed that the emphasis was more on aesthetics than on the taste itself. This was a letdown as we had hoped for a more satisfying culinary experience.Overall Impression:In summary, our visit to The Exchange Coffee, Mercantile & Eatery was a mixed experience. The excessively high coffee temperature and mediocre food quality were notable downsides. However, it's important to acknowledge the challenges that businesses in the area may face, such as the additional credit card fee. Food took forever, then it was cold. AFTER we ordered, we were told there was a 20 minute wait for food. It was more like 35. It was nothing special. Tiny cup of syrup for the waffles. No butter. Just was not impressed. Plus it was overpriced. Probably won't be back.

Order the bubble waffle and pour over.. The pour over was muted and and not soulful. Very bland. They used the Tanzian Peabody for the origin, which is normally very acidic, bright full of flavors such as berry, jasmine, and choclate. This was just very boring. As far the bubble waffle goes, meh. I mean it's unique in its own right. I guess the biggest let down is it took 45 mins to get the coffee and the waffle. For the price point of $16. It's a huge let down. If I have a leisure morning I might come back, but will not bring my clients here. If I had to sum it, another "trendy coffee shop" that is trying to bring in the hip generation with over complicated coffee milk shakes.
