My wife and I are zig-zagging the country on a quest to have a date in all 50 dates. Along the way, we are trying to find unique experiences and make memories. With all the things Wisconsin offers, DelecTable in Madison and the intrigue around it drew us in. After spending a date night in the backroom kitchen of a liquor store...we could not be more pleased nor say enough great things about the Saturday evening we spent at DelecTable! From the reservation to the outstanding communication with Justin, the atmosphere, the service, the delicious farm-to-table masterpieces from Chef Ben, and the wine pairings made for a perfect evening! With seven full courses and a blindfolded mini-course, the three-hour meal was more than a night out - it was a dining experience. We sat at the Chef's Table, just inches from the cooking and prep areas. We had great seats to witness the quality of the food and the attention to detail and pride that went into each plated dish. Not a single detail was missed. Chef Ben and his team took care to discuss, confirm, and double-check that each item was presented correctly and the dietary restrictions of each person were met. While the chef’s tasting will change to represent Wisconsin's best fresh produce, meat, and cheese, the Pecan Old Fashion will always be there to greet you; Give it a try. You can thank us later. What an AMAZING experience! Oh my goodness … the tastes and the wine pairings and the chef’s information and the culinary skill and the service … it was all WONDERFUL! We definitely would encourage people to participate in this dining experience! We had no idea the oils, whiskeys, wines, liquors, vinegars, etc the store front has! We will definitely be back!

This is a difficult review to write. I really wanted Delectable to live up to fine dining standards however it fell short in major ways. *New Years Eve Menu Review*The positives: Meat and vegetables were very well sourced. They are cooking with fresh and quality ingredients. Most meat and vegetables were properly cooked. The waiters were polite and served us in a timely manner.~ Pork Tenderloin with cherry sauce and sousvide sweet potato with sautéed kale and kale chip. The best executed and conceptual dish of the night. The sautéed kale brought great acidity with they cherry. The tenderloin was perfectly cooked. The kale chip added a nice salty crunch. Loved this.The negatives: Dish conceptualization was some of the worst I've ever seen, even compared to a mid tier restaurant. Portion sizing was erratic and seasoning inconsistent.~ Lobster tail deep fried, covered in hollandaise, then put on a poached pear compote. Lobster is a sweet delicate morsel that doesn't need to be covered up and accented with more sweetness. The dish severely lacked acid and I ended up eating the lobster by itself.~ U10 Bay Scallop on pommes purees with a mushroom gravy. Why are you taking one of the best scallops and putting it with a heavy gravy and potatoes? You can't even taste the scallop.I ate the scallop alone and enjoyed the pommes purees and mushroom gravy on there own. Again another seafood item served without citrus. Potato's were chunky which isn't how pommes purees is served.~ Foie gras torchon with apricot ice cream on whipped honey. I gagged eating this. The whipped honey was SO STRONG you could barely taste anything other than honey and apricot ice cream. Only tasting notes are sweet and a tiny bit sour. The bread was stale and the torchon was seasoned in maple syrup (more sweet). I honestly don't believe they ever tasted this themselves and I can't fathom what there intention was.~ Wagyu Beef - This was cooked medium well and the fat on the sides wasn't rendered. A tragic waste of such a beautiful cut of meat. It was under seasoned and the portions were inconsistent.~ Waffle with Caviar and crème fraiche- Would have been interesting except it was drowned in maple syrup.~Rose Trifle - It was 70% gelatin... fill the inside with a mousse next time and put a thin layer of gelatin to get the globe look. It will be more texturally interesting and more pleasant to eat.A wait staff member did a fire show at the end and he seemed very annoyed to be doing it. There was no introduction to it happening and was just a weird random event. Fire shows don't have a place at a fine dining restaurant.Cocktails were unsurprisingly far too sweet.The cost of the event doesn't excuse the glaring problems in the menu and execution of the dishes. I'm surprised to see such positive reviews on google as our dinner was laughably bad. Luckily the money is going to well sourced products which ended up being the highlight for me.

This is one of the most underrated yet incredible dining experiences in all of Wisconsin. From the creative and largely locally-sourced menu to the impeccable service and wonderful bar, this restaurant checks all my five-star boxes. Haven't heard of this place? That's just it--this is the hidden gem that delivers an outstanding dinner each night. Located at the back of the Vom Fass retail store, this 32-seat prix fixe dining experience offers one seating each night with a set 5 or 6-course meal. This space is neatly nestled in the Shorewood Hills retail center, flanked by Penzy's Spices and Conscious Carnivore--two fantastic culinary shopping destinations in their own right. Dinner seating is at 6 pm, and that's when the magic happens. Chef Benjamin and his talented team begin preparing the first course right in the dining room. Chef Benjamin explains each dish as it's being plated, including the source of the ingredients. He and his staff work tirelessly to locally source much of the produce within a 50-mile radius of Madison. This is no small feat, especially during the winter months, yet they consistently pull it off. Each subsequent course is handled in the same manner: final preparation, plating, a brief description by the Chef, and then serving--all done in the presence of the diners. I highly recommend splurging a little to take advantage of the wine or bourbon pairing offered with the meal. These pairings transform a great dining experience into an unforgettable favorite of the year. That was certainly the case for the five of us who dined there on a Thursday night in November. With a mix of wine and bourbon enthusiasts in our group, everyone commented on how the pairings elevated the overall meal. The menu changes not only seasonally but often weekly. However, there always seems to be locally sourced wagyu beef, fresh greens or root vegetables, honey, and some amazing dressings and sauces using the diverse vinegars available in the Vom Fass retail space. We were lucky to catch a spotlight dinner/chef's tasting menu night, highlighting a farm located 25 miles southwest of the restaurant that naturally raises wagyu beef. Our six-course meal started with beef liver pâté, moved on to roasted bone marrow with beef tartare, braised beef tongue, short ribs with potatoes, and finished with a hay-smoked ice cream that was astounding. This is just a glimpse of the creativity of the Chef at Delectable. You owe it to yourself to check it out and see if it isn't an incredible dining experience.

A Hidden Treasure... A very unique and fun dining experience! So glad we did this... Worth every bit... It truly is a "dining experience". Excellent service and the food is undescribable.. The pairings were perfect... The environment was cozy & classy and even to the detail of the background music..set the perfect mood. We'll be back!... With more people too..

REVIEW FOR COOKING CLASSPros: Chef Joel was very knowledgeable and also really entertaining. The cocktails were amazing, and the food and ambiance were nice too!CON: There were so many people at the class that we didn't even get a chance to touch a single ingredient. We've been to a bunch of cooking classes, but this was the only one where we didn't actually get to, well, cook!We might try the dinner experience there because I have heard great things, but for a cooking class, we'd say, "pass."

A most memorable Rehearsal Dinner! DelecTable was the perfect venue for our rehearsal dinner; Justin, Chef Ben and the entire staff were incredibly engaging, professional and created a night we will never forget. Really great food and excellent value for everything you get. The wine pairings were great and appreciated hearing why they were paired with the dish. They also had a nice touch for the birthdays in the room with a surprise gift! The staff were pleasant and knowledgeable about what was being served. Area for improvement - the pacing is slow. For a 6pm dinner we didn't leave until 9:45pm. Almost 4 hours for dinner is too long.

I dont say this lightly, since I love and respect a lot of the restaurants in Madison, but this is the best culinary experience I had in Madison. Ever. Will not be surprised if this place gets a Michelin star.Service is top level. Very attentive staff.The cocktails are fantastic- loved the wine-based old fashioned and the Manhattan was delicious.Food was delicious and sourced locally- delicious meat and cheeses as well as vegetables and other ingredients.Lastly, the presentation with the chef explaining the food before each meal was very engaging.Overall, a great experience.Oh, and almost forgot- the restaurant also has a store that sells delicious top-level wines and liquors.
