Vietnamese cuisine is one of my favorites and if I could eat it everyday, I would. A lot of options are gluten free already. PHO CHAY (veggie pho ) has a lot of flavor, they use their veggie stock by boiling vegetables and a mushroom mix for hours- maybe over night if I'm correct. You can add steamed/fried tofu or just add extra vegetables! I sometimes request both tofu's for texture. Stunningly good, haven't had Vietnamese food this good since visiting Saigon before I was vegan! House-made passion fruit soda, tofu banh mi with incredibly fresh bread, tofu bun all brilliant. Really appreciated that the staff knew what vegan meant too.
