Nice spot in Aspen with a little cute terrace. I went there for a coffee, but it’s like a Starbucks. I was expecting for something better. Inside is nice too and clean. Food looks fresh and tasty.

Went here twice, first time was okay, we were just hungry for food. Would not recommend the vegan pho which is literally water and noodles. Would also definitely not recommend the blueberry pancake. It was disgusting. See photo.

Pretty excited to come here given the menu items, however; ::: The food that came out, had no seasoning on it whatsoever which was disappointing because of the price. Would not recommend giving the other options downtown but the coffee was good so if you’re going there just for that, that would be fine.

This is my second time giving this place a try and there will not be third. I ordered the seasonal winter salad (Brussel sprouts, quinoa, butternut squash, cabbage, apple dressing) and the chai tea latte to go.The chai tea turned out nice, not too sweet and had a mild spice to it.The seasonal salad tasted like I was eating only quinoa with zero seasoning to it. The few pieces of butternut squash that I had, were not thoroughly cooked through, edible, but hard. If you’re a fan of no flavor, this is the dish for you.

We ordered falafel wraps, berry tea, and a cookie. Everything tasted odd and not very good. The cookie didn’t taste like a cookie. It’s was dry, salty, and flavorless. The falafel was also pretty flavorless. Everything was also very expensive. The atmosphere is cute but that’s about the only positive thing I can say.

As vegans (or vegetarians when needed, like when we travel), it’s always so refreshing to find places with options, and the Spring Cafe definitely had options. Of course Aspen is expensive, so we expected that. BUT, I honestly didn’t think what I got was worth the price at all. I got the chickpea tuna melt - which was $23. It was just a regular sized sandwich bread (like a sandwich loaf you'd buy from the store) and it was pretty much just hot chickpeas. With a few chips. I would not recommend it. My husband’s tofu bowl was much, much better and I wish I’d gotten one as well. The veggies were lovely and it was quite tasty - still expensive, but more worth it because it was good. We were lucky to find a place to eat outside, because I honestly didn’t find the inside particularly welcoming. The staff was very indifferent, which was so opposite of every other place we went in Colorado - the people were so nice! Being from Southern California, Aspen just reminded me of a lot of places out there - overpriced, overhyped, someplace where people with money go to feel exclusive. And the Spring Cafe embodied that for me. If the sandwich had been outstanding, maybe fresh bread, some flavor to the chickpeas and not heated all the way through, but more of a "put under the broiler for a minute," that would have been different, but it wasn’t. I should have gotten one of the bowls! We don't plan there being a next time in Aspen, but I would go back to have something else. Just not that sandwich.

I ate at Spring Cafe twice while visiting Aspen. I had the Rueben sandwich for lunch, which was very flavorful and filling although very oily! I also got a chocolate chip cookie but it was kind of dry and crunchy. For breakfast the next day I had Blanca's Sandwich which was very tasty, the tofu scramble on it was the best I've ever had! I got the dirty chai latte which was decent but not amazing. I highly recommend the tofu scramble here. A little pricey but great to find vegan food while on vacation.

A latte and a dirty chai cost $17. The PSL was undrinkable, way too bitter, and the dirty chai was barely passable. Waste of money!
