As vegans (or vegetarians when needed, like when we travel), it’s always so refreshing to find places with options, and the Spring Cafe definitely had options. Of course Aspen is expensive, so we expected that. BUT, I honestly didn’t think what I got was worth the price at all. I got the chickpea tuna melt - which was $23. I ate at Spring Cafe twice while visiting Aspen. I had the Rueben sandwich for lunch, which was very flavorful and filling although very oily! I also got a chocolate chip cookie but it was kind of dry and crunchy. For breakfast the next day I had Blanca's Sandwich which was very tasty, the tofu scramble on it was the best I've ever had! Pretty excited to come here given the menu items, however; ::: The food that came out, had no seasoning on it whatsoever which was disappointing because of the price. Would not recommend giving the other options downtown but the coffee was good so if you’re going there just for that, that would be fine.
