This is a build your own meal restaurant. All the ingredients appeared fresh. I stopped in for breakfast and had the smothered burrito.I built mine with steak. The steak was very tender. They put a good amount of green chili inside and on top. This is important to me because I do not like dry burritos.I ate outside on the patio which was shaded and a nice place to enjoy a meal. I absolutely love this little hidden gem on the UC Health Anschutz Campus in Aurora! It is tucked away on the road behind the main hospital. They make the most amazing bowls filled with delicious, fresh, healthy and nutritious foods. Their tofu protein option is actually baked ahead of time and sliced perfectly for the bowls. Etai's green house on campus is awesome. They have great breakfast burritos and great salads. They are a bit expensive, but that's because food costs have gone up. They have really good quality food, though.
