2 stars because the drinks were amazing. The bartender here is clearly carrying the team. Spent 70$ to spend an hour and a half here to get 2 poorly made excuses for sandwiches and a tiny appetizer that was essentially texas toast from Walmart a strawberry and goat cheese. The service was awful and I was only able to order one drink as the waitress disappeared almost the entire time. So many other awesome places in castle rock to go to. We won’t be coming back.

As lucky as you can get during Restaurant Week, we were seated by the owner Kim and really lucked out with our server Sam. Kim was so gracious as she told us about how we could order. When Sam came to take our order she helped us select the right delicious dishes for our dinner.The restaurant itself is modernized Old City Castlerock and is really cool. It has been serving up awesome dishes for 19 years. The Denver Restaurant Week menu is fantastic with your choice of 3 appetizers, 4 main course delights and last but NOT least 5 dessert choices. When it’s not restaurant week the menu selections multiply not to mention the beverages, for instance they offer you a choice of many different vodka, gin and rum drinks not to mention wine and beer and nonalcoholic selections to choose from. Simply put, The Union has everything you would want to feast on and the portions and service will be everything you could possibly hope for.Next time you’re looking for a fantastic dining experience come to The UNION Bistro, you’ll be glad you did.Parking: There is plenty of parking but when you first arrive you might think it’s crowded. Just look you find a perfect parking space.

We LOVE Union! It's always our go to for great food and drinks. Chuck and Tom always come through with amazing service along with the rest of the staff. Definitely a staple if you're in Castle Rock!!Kid-friendliness: Our kids love it here!

One of my favoite spots in Castle Rock. Their appetizers/small plates are amazing. Italian eggrolls are a must. Crispy coconut chicken sandwich and Chi-town are my favorite sandwiches. Mains are great, sides are great, drinks are great and well priced. Can't go wrong here and unlike alot of places in CR, you can get out of here for under $80-100 for two with drinks and tip.

Stopped in for dinner and a drink. The beer was fine, but we were not impressed with our dinner. My husband ordered the chicken panini and the chicken was overly spiced with cinnamon it was the weirdest tasting sandwich we ever had. My burger tasted like it was a frozen precooked patty and it's very over priced. Save your money!

Tried this place while working in Castle Rock for the day. I went with a coworker and got the burger. It was really good! The burger was flavorful and well cooked. The bread was soft and tasted fresh. The vibe was casual and the service was good. If I'm ever in that side of town, I would love to check them out for dinner.

The food and ambiance here were OUTSTANDING. I'm def gonna take a crack at making the Italian eggrolls lol. It was a fairly big place on the corner but we got a seat at the bar right away. I will only knock one part, one of the bartenders was super inattentive. She was having a conversation with a couple patrons and barely served a few of us. We had to wave down another bartender to place an order . Also, be forewarned the parking is a little tricky to get. All in all a great place though

The portions of food are great, the side of macaroni is huge! My drink actually had a decent amount of alcohol in it unlike every other restaurant I've been to. I went in the afternoon and the music wasn't loud so I could actually unwind with my partner before his work and the service was excellent. This is my new favorite place for nice occasions out. I hardly even like most salads because I'm extremely picky and it was amazing.

First time there. Dinner service was terrible. Food was decent, took 25 minutes for my non-happy hour cocktail. It was room temp by the time it arrived. (Really frustrating they don't offer happy hour in the dining area). There was no seating at the bar so your stuck in there and can't get the HH deal. Unbelievable. Only reason we stayed was because it was a favor to my friend. Don't think we'll be going back.

Union is a sweet little spot in old town Castle Rock that never fails to delight! I've been going for years for the food, service and ambiance. By the way, the pie is amazing!
